    My heart goes out to BabyRN and lax15bsu. I am so sorry for your losses, ladies. I'm praying for you both.

    As for recipes, I have none to share today. The very thought of food makes me want to vomit (my Food Network addiciton is suffering, so sad), so I will just say HI and Happy Tuesday to everyone and duck out of the food post. :o)

  • Thanks for doing this Jenn!  I'm feeling good today.  I had majorly sore gums last night and a killer headach.  Here's my favorite summer recipe:

    Pretzel Fruit Pizza from Allrecipes.com  

      

    INGREDIENTS:

    3 cups finely crushed pretzels

    2/3 cup sugar

    1 1/4 cups cold butter

    1 (14 ounce) can sweetened condensed milk

    1/4 cup lime juice

    1 tablespoon grated lime peel

    1 1/2 cups whipped topping

    7 cups Assorted fresh fruit (see note below)

     

    DIRECTIONS:

    1.   In a bowl, combine pretzels and sugar; mix well. Cut in butter until mixture resembles coarse crumbs. Press into a 14-in. pizza pan (I just use a 9 x 13 casserole dish).  Bake at 375 degrees F for 8-10 minutes or until set. Cool on a wire rack; refrigerate for 30 minutes.

     

    2.   Meanwhile, in a bowl, combine milk, lime juice and peel. Fold in whipped topping; spread over crust. Cover and chill. Top with fruit just before serving.

     

    NOTE: It says 7 cups of fruit, but I have never bought that much.  I usually use a bunch of grapes cut in half, a pint of blueberries, a package of strawberries, and sometimes kiwi.  I like to make a pretty pattern with the fruit!

    Here is my favorite Summertime recipe from my MIL.  This is great because you can do all of the "prep" early in the day before it gets to hot to be grilling... or cooking in general.

    *Grill chicken breasts (1 for each person is usually plenty) then chill in the fridge.

    * Mix a bowl of your favorite fruit, we use: strawberry, blueberry, blackberry, watermelon, grapes, peaches....

    *Then the Lemon Poppy Dressing:

    2-3 green onions finely chopped

    1/4 c digon mustard

    2 Tbs Lemon juice

    1/4 c white wine vinegar

    2 c Extra Virgin Olive Oil

    2 TBS poppy seeds.

    Miz all ingredients together and chill.  Serve chicken and fruit with the poppy dressing on top-- it is wonderful!  You can save the dressing in the fridge for the summer (2-3 months) and use it for salad dressing or more of this yummy meal.  We made it last night when family was over and it is always a huge hit!

  • Good morning clovers!  Feeling pretty good today.  Bloat seems to have gone down for a bit.  I have included a drink recipe for today.  It is very easy but delicious for a warm summer nite.  Enjoy! 
     
    Citrus Cooler
    1 env. KOOL-AID Sugar Free Lemonade Flavor Low Calorie Soft Drink Mix
    2 cups  cold water
    2 cups cold orange juice
    1 bottle  (1 liter) diet lemon-lime carbonated beverage, chilled
    ice cubes
     

    PLACE drink mix in large plastic or glass pitcher. Add water and juice; stir until drink mix is dissolved. Refrigerate until ready to serve.

    STIR in carbonated beverage just before serving. Serve over ice cubes

  • Good morning Clovers!!!  this is my favorite dish ever!!  taco salad.

    1 lb of ground beef cooked and drained

    2 cups of cheddar cheese (shredded)

    lettuce (as much or little as you want)

    1 bag of doritos (crushed)

    italian dressing (as much or as little as you want)

    Mix all together in a big bowl and eat.  Yummy!!  You can add other stuff to (that I don't like) like tomatoes and onions.

    Oooohhh, I think I'm making that for dinner tonight.

    Lets see a quick and good receipe is:

    Enchilada Cassarole

    1 pound ground beef
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 small can rotel
    1 small can (15 ounce) enchilada sauce
    1 pound velvetta cheese
    1 dozen corn tortillas

    Cook ground beef in large skillet until meat is done; drain. Then add each can of soup, rotel, and enchilada sauce. Heat mixture to boil and allow to simmer for 5 minutes. Take mixture off heat. Put four corn tortillas in bottom of 9 x 13-inch baking dish. Add one-third of the meat mixture and one-third cheese. Continue making layers of tortillas, meat mixture and cheese until all ingredients are used. Bake in 350 degree F oven for 20 minutes. YUM!!!
  • Good morning lovely ladies. I am well. Just exhausted! I am also hot as hell in my house. Hubby is buying air conditioners.

     

    I like this because its not that creamy potato salad that is not good for you. This is a healthy option and the fresh dill really makes it. You can put in a little more.

     

     

    Healthy Homemade Potato Salad.

     

    10 medium sized  Yukon or red potatoes, cubed. I like red potatoes.

    ? cup chopped yellow onions

    1 1/2 tablespoons chopped green onions

    1/3 cup of light olive oil

    fresh dill about 2 tablespoons

    ? teaspoons of salt

    ? teaspoon ground black pepper

     

    Preparation:

    Boil the potatoes for 12 to 15 minutes, until they are tender. Drain the cooking water and rinse the potatoes in cold water to stop the cooking process.  Set the potatoes aside.

    In a small skillet set over medium heat, saut? the onions in the olive oil for 6-8 minutes, until they begin to turn golden brown. Remove the skillet from the heat and stir the green onions, dill, salt, and pepper into the hot onion and oil mixture. Allow the dressing to cool to room temperature and then toss it with the cooked potatoes

  • Good morning everyone,

    I'm feeling great today. Here's one of my favorite recipes for spaghetti salad. The measurements aren't exact, so you'll need to adjust them to suite your tastes. You can add more or less dressing depending on how you like your pasta salads.

    1/2 box cooked thin spaghetti (I use whole wheat)
    1 large tomato
    1 large cucumber
    1 medium white onion
    1 medium bell pepper (or yellow)
    1 cup fat free ranch dressing
    1 cup fat free italian dressing
    freshly ground black pepper to taste

    Drain the spaghetti, adn let it cool after cooking. Dice all the vegetables, then combine all of the ingredients. Refrigerate for a few hours and enjoy.

    My coworker suggested this yesturday and I had it for breakfast this morning... it is actually really good. 

    Add a mashed bannana to a single oatmeal serving ... microwave as usual. 

    My stomach can't handle anythign too complex!  ugh.

  • Mmmm, the dorito and enchilada recipes look DE-licious! Def printing those out for one night next week. haha.

    I feel totally normal, whiiicchhh kinda scares me a little bit cuz i felt normal the last time too. I'm not nauscious, i don't feel bloated, i'm DEFINITELY tired, but other than that, nothing...oh man, now that i'm writing that, i hope everything is ok. I hate to say that i actually WISH i had symptoms.

    Anyway...here's my recipe...

    Cracker Candy

     

    1 sleeve               Saltine Crackers

    1 stick                 Butter

    1 cup                   Light Brown Sugar

    1 bag                   Milk Chocolate Chips

    Nuts (optional)    Crushed Hazelnuts, Pecans or Walnuts (use whatever you like)

     

          -     Preheat oven to 400o.

          -     Line a cookie sheet with tin foil (preferably the non-stick brand).  Lay the crackers as close together as possible on the tin foil.

          -     Bring the butter and sugar to a boil for 3 minutes.  Drizzle and spread lightly over the crackers (don?t worry about covering every part of the crackers; the heat of the oven will allow the sugar mixture to bubble and spread).  Bake in over for about 3 minutes.

          -     Take out of oven and immediately sprinkle chocolate chips over sugar mixture.  Put back in oven for about 1 minute.  Take out and spread chocolate chips evenly over the top.

          -     Sprinkle with the chopped nuts.  Put in refrigerator until firm and then break apart.

     

    Yum!

  • I'm only 5 weeks along, and I don't have m/s ( yet...), but food simply does not appeal to me. Very little appetite ( which is highly unusual for me, I'm a world class eater). But the one thing that does appeal to me, food wise, is this dip I concoted, along with some tortilla chips.

    Fun Dip! ( makes one serving)

    Two Laughing Cow Cheese wedges ( preferably Garlic and Herb)

    Two tablespoons of Salsa ( the spicier the better, if you ask me)

    Place the cheese wedges in a microwave-safe bowl. Cover them with the two tablespoons of salsa. Heat on High for 45 seconds. Stir and enjoy!

     here is one of our family favorite desserts!

    ingredients...

    1 package of oreo cookies

    8 oz of cream cheese

    12 oz of cool whip

    2 packages of instant vanilla pudding (the regular size not the large box)

    preparation:

    prepare the 2 packages of vanilla instant pudding according to the recipe on the box.  refrigerate as you would for pudding until it has that pudding consistency.

    mix the cream cheese and cool whip....and then add pudding when ready

    grind the oreo cookies until they are very fine (cuisenart works well for this!)

    in a large bowl layer starting with the cookie grinds then pudding/cream cheese/cool whip mix then cookie grinds...and so on ...and end with cookie grinds on top!

     
    refrigerate overnight!  (i use skim milk in the pudding...fat free cool whip and fat free cream cheese and it still tastes fabulous!)

     Baked apple:

    Core an apple with a knife and leave the bottom intact. slit the sides down about a third of the way down.

    Place apple in microware safe bowl

    fill core will white sugar, brown sugar, honey, margerine/butter (alternate wet and dry ingrediants).

    zap for a couple minutes and serve with optional ice cream.

  • Hello to all the Clovers! I hope you all had a lovely day. I am sorry I have not updated the last few days. I was too caught up with the Drs appt yesterday. I will be a better bumpie/clover, I promise.

    I am feeling pretty good today. I wasn't tired most of the day and didn't get my usual nap in, and up until now I was totally fine with that.

    As all I like to eat these days is sweet, here is a recipe from my granny's book of recipes:

    Chunky Apple Cake

    1/2 c butter, melted

    2 c sugar

    1 tsp vanilla extrace

    2 c flour

    1 tsp baking soda

    2 tsp ground cinnamon

    4 granny smith apples, peeled and sliced

    1 c chopped walnuts, toasted (optional)

    cream cheese frosting (recipe below)

    Preheat oven to 350*. Stir together first 4 ingredients in a large bowl. Combine flour and the next 3 ingredients; add to butter mixture from step 1 and stir until blended. Stir in apple slices and walnuts. spread into 13x9 pan. Bake for 45 minutes or until toothpick comes out clean. Cool on wire rack or in pan. Spread with cream cheese frosting and sprinkle with walnuts if desired.

    Cream Cheese Frosting

    8oz Cream Cheese

    3 tbs butter or margarine (softened)

    1 1/2 c powdered sugar

    1/8 tsp salt

    1 tsp vanilla

    beat cream chese and butter at medium speed until creamy. gradually add sugar and salt, beating until blended. Stir in vanilla.

    This is the most delicious cake. I just made myself hungery (again).

  • Hey, there lucky clovers.  I really need to take my recipes to work with me--so, that my response is not so delayed on Tuesdays.  Here is a favorite summer time recipe... it's a nice alternative to the usual pasta salad and so easy to make.

    Spinach Orzo

    Ingredients:

    • 1 (16 ounce) package uncooked orzo pasta
    • 1 (10 ounce) package baby spinach leaves, finely chopped
    • 1/2 pound crumbled feta cheese
    • 1/2 red onion, finely chopped
    • 3/4 cup pine nuts
    • 1/2 teaspoon dried basil
    • 1/4 teaspoon ground white pepper
    • 1/2 cup olive oil
    • 1/2 cup balsamic vinegar
    Preparation:
    • Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water. Transfer to a large bowl and stir in spinach, feta, onion, pine nuts, basil and white pepper. Toss with olive oil and balsamic vinegar. Refrigerate and serve cold.
