I've decided I'm going to make DH some of his favorites for dinner tonight (my devlish ploy for getting him "in the mood" since he hasn't put the moves on me in about 6 weeks).

Everyone in my family loves my mom's recipe:
I use 5-6 apples (Cortland are best but MacIntosh will do) for a 9" pie.
Slice the apples and combine them in a bowl with 1/2 cup sugar, 1/2 tsp. cinnamon, 1/2 tsp nutmeg, a dash of salt, and 3 tblsp flour. *You may need to adjust the flour amount depending on how juicy the apples are. Pour this mixture into the pie crust.
For the topping, I combine 1 cup flour, 1/2 cup softened butter, 1/2 cup packed light brown sugar in a bowl and mix it by hand until chunky and crumbly. Spread over the top of the pie.
Bake in a 400 degree pre-heated oven for 30 minutes (cover edges of crust with foil). Remove foil after 30 min. and recover the entire pie with foil for 15 or so minutes.

ETA: I often do a little more cinnamon because I like a spicy pie; you could also use some allspice in there, too, if you wanted.

Yep you can't go wrong with Paula Deen!
1/2 cup butter
3 tblsp flour
1/4 cup water
1/2 cup sugar
1/2 cup brown sugar
5-6 apples cored and sliced
Preheat oven to 425
Place pie crust (I use store bought) in pie pan and put sliced apples on top of crust. Place second pie crust on top and poke holes (or lace the crust over the top)
Simmer all the other ingredients until they are all melted together (stir during this, it only takes a couple minutes)
Pour the melted mixture on top of the pie and into the holes. Bake 15 minutes at 425, then reduce heat to 350 and bake another 35-45 minutes.
