I use french onion soup mix and it's heavenly. I don't know how that works with food allergies, though. I've never heard of a rice recipe - that sounds interesting.
I put any veggies I have (carrots, celery, onion, squash), 1 egg, a heaping handful of oatmeal, salt, pepper, worcestershire, kitchen bouquet. I top with tomato sauce, but you could do nothing or make a brown gravy.
My easy peasy and delicious meatloaf recipe -- freezes great.
2lb ground meat (I like to use 50/50 beef/turkey)
1 package (6oz) stuffing mix
1 cup water
2 beaten eggs
1/4 - 1/3 cup GOOD BBQ sauce (good sauce makes the difference, we have BBQ sauce shipped from Dinosaur BBQ but at the local story Wiliamson Bros is good) -- but if no tomato, my guess is any other similar consistency sauce woudl work. Perhaps you could use A1?
Mix all together. Make into 2 loaves in meatloaf pans. (I use aluminum so I can freeze one) Top with another 1/4 cup or more BBQ sauce. Bake 375 for 40 minutes. I serve with extra BBQ sauce on the side. To freeze, cool, wrap in foil and put in a freezer bag.
My mom makes meatballs with rice (similar to meatloaf I guess). Basically you use 1 lb. hamburger and minute rice, salt, pepper, onion, mix together and make into meatballs. Then a can of mushroom soup and can of water (we always add more rice in the pan). Sorry I don't have the exact recipe with me but it is very easy to wing! Can your son eat cream of mushroom??
I've only made it with pasta sauce or gravy. I've also done the quick version with using a McCormick seasoning packet and either use pasta sauce or canned (or another McCormick packet) gravy to replace the ketchup. I guess you could use BBQ sauce - but I'm not a BBQ fan so I've never tried it.

I dont even like meatloaf but this has me wanting some, NOW! For those that you tomato sause, what kind do you use? A hunts or delmonte type, or more like a bigger can that you would use to make pasta? Sorry if these seems dumb, Im kinda clueless!
