2 medium sized cucumbers, peeled and sliced in moon shapes ? cup white vinegar (Rice Wine Vinegar would work great but I didn?t have it) 2 tbsp regular sugar 2 tsp Sesame Oil
Mix
all the ingredients in a medium sized bowl and let sit for at least 15
minutes before serving. Can be served chilled or at room temperature.

Thai Peanut Noodles
1 package spaghetti (I used Brilla Plus Whole Wheat) ? cup peanut butter (I used the all natural type) 1 tbsp Sesame Oil (I used Toasted Sesame Oil for more flavor) ? cup soy sauce ? tsp garlic powder ? tsp. onion powder 1 tbsp sugar ? - 1 tsp Thai Red Curry Paste (VERY SPICY, if you don?t have it you can use cayenne pepper instead) 1 tbsp lime juice ? cup reserved pasta water
1. Cook pasta in plenty of water. No need to salt the water, the sauce has plenty of flavor.

While pasta is cooking combine all of the other ingredients (except for
the pasta water) in a bowl. I used a wire whisk to make sure it was
mixed really well. Mixture will be think.
3. Just before pasta is done take about ? a cup of the water and mix it into sauce.
4. Drain pasta and return to pan.
5. Mix pasta and sauce.
Dish
is great served warm as is or with saut?ed chicken and veggies on the
side. But the best part of this recipe is that it?s even better the
next day served cold!!! Side dish ideas: Sesame Broccoli, cucumber

we make a "salad" out of equal parts cuke and carrot. diced. add a little fresh lemon juice (or lime juice) and a pinch of cayane pepper and salt. in the summer we normally keep a vat of it in the fridge. very refreshing on a hot day.

I peel them and slice them thin; add some sliced/cut (not chopped) sweet onion and soak them in 1.5 cups of vinaigrette or Italian dressing. I made the dressing with red wine vinegar, minced garlic, italian seasoning, and some olive oil. This is the ONLY way I'll eat cucumbers. The only other time I like them is in PeiWei's Dan Dan Noodles...hehe. I normally can't stand a raw, plain cucumber.
ETA: the 1.5 cups of dressing was for 2 large cucumbers. It made enough for a "side" for 5 people.

slice cucumber into thin pieces. soak in vinegar & salt (to taste).
I craved this when pg with ds too. i poured vinegar & salt into a bowl, sliced the cucumber and let it sit and ate it all within a couple of days. I was living with a friend at the time and she said "EW! Gross!" until she tried it...and now she makes it all the time! haha!
Mix this all together in a container and chill well. Top with a slice of feta cheese when ready to eat. Great snack or lunch even with some bread to go with it.

3 or 4 large tomatoes diced
1/2 red onion diced fine
Great extra virgin olive oil
Salt and pepper to taste
