I have tons of green zucchini and yellow summer squash. We've already made a couple batches of zucchini bread/muffins and put some of the muffins in the freezer. I've shredded up both the zucchini and the squash to add to pasta sauce and I'm making a yummy looking goat cheese and summer squash pizza for dinner tomorrow (here if anyone is interested: https://smittenkitchen.com/2009/07/lemony-zucchini-goat-cheese-pizza/ )
I still have tons of the stuff left. Any other ideas for using it all up, especially the yellow squash? Can I shred it up and use it to make zucchini bread just like the green stuff? I don't want any of it to go to waste since I spent too much money getting the garden in place this year, but I'm running out of ideas...
Re: Any ideas for all of this zucchini and squash?
We make quesadillas with yellow squash, zucchini, carrots and mushrooms. They are awesome.
My mom makes a really good summer squash casserole. I want to say the recipe came from the Food Network.

We substitute squash and/or zucchini for meat in spaghetti or baked ziti. Sometimes I do spaghetti with chicken, red sauce, and half a block of cream cheese with lots of squash chopped up in it. Soooooo good!
My MIL makes squash casserole that it really good. I don't have the recipe, but I'm sure you could find one online.
I also like them just marinated in italian dressing and grilled.
I was going to suggest that goatcheese pizza from smitten kitchen
My H will slice up squash, zukes, onions and sausage, put them on skewers and grill them while patting Italian dressing on them. They.are.amazing. We'll also slice them up as a side for lunch with some ranch dressing for dip. The kids love em
These are delish!

If you're not all muffin-ed out, these are a huge hit around here.

I also have a stuffed zucchini recipe somewhere, with a filling of tomatoes and raisins and pine nuts. If you're interested, I'll see if I can find it.
