I don't have an exact recipe anymore, but this is basically what I do:
2 cans of refrigerated jumbo biscuit dough (I prefer the flaky ones) - makes 16 jumbo or 32 "small" ones
About 1 # of ground beef (chicken, turkey, shredded, whatever you like)
1 medium onion (chopped)
1- 4oz can of diced green chilies
8oz shredded cheddar or Mexican blend cheese
Pre-heat the oven to 375 degrees
For the GTG, I made "small" ones in a regular muffin pan. Normally I make them in a jumbo muffin pan. For the small ones, I split the biscuits in half (the flaky ones make this easy). For the jumbo pan, I use a whole biscuit.
Brown the ground beef with the onion and green chilies. Drain the grease.
Spray the muffin tin with non-stick cooking spray (if you have a really good non-stick pan, you don't need to do this)
Flatten out the biscuit (or 1/2 biscuit) and stretch it out so you can "line" the muffin cup. Press it in the bottom and up the side of the cup. If you get a hole in the biscuit, just press it back to gether.
Spoon the meat filling into the biscuits
Bake 10-13 minutes or until biscuit starts to turn golden brown. Sprinkle the cheese on them and then put them back in the oven for 1-2 minutes, until the cheese is melted.
Serve with pico, sour cream, guac, whatever you like with your tacos.
These also freeze really well. Thaw them and then just heat them in the microwave.

We also make "Pizza Biscuits" with pizza sauce, Italian sausage, pepperoni, mushrooms, onions (any pizza toppings!) and mozzarella cheese. I'll brown the Italian sausage, everything else, I use raw. I prefer chunks of pepperoni so I'll cut up a "stick" instead of the slices. Mix the toppings with enough pizza sauce to get a good coating, more if you like your pizza really saucy. And then just spoon it in the biscuits and cook like above.
