Can anyone rec a fabulous (and easy) dessert?

We are going on a family trip up to a cabin in the mountains this weekend and I am bringing dessert (for 7 adults and 6 kids).  I am definitely going to do a pan of Peanut Butter Rice Krispie Treats but need something else too.  Any ideas on something easy that can be made a day ahead and transported up in the car for 3 hours???  TIA!

  • I haven't tried this yet, but I copied the recipe bc a few people here said it was super good and sounds really easy!

    CHOCOLATE ECLAIR CAKE     

    2 sm. pkgs. vanilla instant pudding
    3 c. milk
    1 (8 oz.) Cool Whip
    1 pkg. graham crackers

    Choc frosting



    Make vanilla pudding with just 3 cups of milk. Mix Cool Whip with pudding. Layer in a 9 x 13 inch pan as follows: layer whole graham crackers, then 1/2 Cool Whip mixture, then layer graham crackers, then other 1/2 of Cool Whip mixture, then top with graham crackers (one layer). Frost with chocolate frosting for Eclair Cake.

  • How about strawberry shortcake. Buy the premade shortcake, thing of strawberries you can cut up there and add sugar, and take a frozen whip cream that will thaw in the car? Or cookies/brownies

  • Berry Berry Cool Pie

    1 (14oz) can sweetened condensed milk

    1/2 cup lemon juice

    1.5 - 2cups assorted fresh berries (raspberries, blueberries, blackberries)

    1 (8oz) container cool whip

    1 (6oz) ready pie crust

     

    In a large bowl, mix together sweetened condensed milk and lemon juice; combine well.  Mix in berries.  Fold in cool whip. Spoon mixture into crust.  Freeze 5 hours or until set.  Let stand 30-40 minutes before serving.  Garnish as desired.  Store leftovers covered in freezer.

    ** Just put it in a cooler w/some ice packs to travel **

  • check out kraftfoods.com, everything they have is easy and good. Everyone loved the strawberry trifle and you could just put it together when you got there.
