I am looking for some great dessert ideas for a couple of cook-outs that we have to go to this weekend. I really wants something refreshing. I did a raspberry cobbler with vanilla ice cream and a flag cake last year so I'm looking for some new ideas. What are your favorites?

I have 2 super easy go to summer desserts:
Fresh fruit with dip- the dip is equal parts of sour cream and vanilla pudding (trust is yumm-o) I like it b/c I can make it fat free or sugar free depending on the crowd!
Strawberry jello cake: It's made w/ jello, angel food cake, cool whip and frozen strawberries. I can post the recipe if you want ;O)

Pineapple Angel Food cake is one of my favorites
It's awesome, light, low calorie(!!). Can be frosted with cool whip (don't do that too ahead of time though), but tastes great plain too. Or good served with strawberries.
Can also use any kind of pie filling, but I've never tried those variations.
Ice cream cakes. Buy a graham cracker crumb crust, throw some ice cream in it and mash it down, then drizzle choc on top. It looks pretty and tastes great. And it's cheap. The oreo crusts are good too.

It seems like a weird combo, but everyone loves the strawberry pretzel dessert.
Fruit pizza is also always a hit.
ice cream sandwich cake.
buy a disposal pan. coat the bottom with cool whip, line up ice cream sandwiches side by side, cut and fill in as necessary. top with more cool whip. drizzle with chocolate and any other yummy toppings. free till serving.
