I've been looking forward to making this carrot cake all week - like, drooling almost every day thinking about it. Finally got the ingredients this morning, put it together, made the from-scratch frosting, and baked it. Took it out of the oven to find complete soup.
Forgot the baking soda.
UGH. What a waste of time and energy.

Cream cheese frosting makes EVERYthing better, in my experience.
What also makes everything better is this super-yummy burnt sugar frosting that goes on burnt sugar cake. It's seriously almost like eating creamy caramels. I always make extra when I make it for the cake, and eat in on graham crackers after the cake is gone.
