Quick meals that include hidden veggies?

Getting DS to eat veggies at this age was easy -- I could make him steamed peas or corn & he'd gobble it right up.  His little sister, not so much.  If she even sees something on her plate that isn't meat, bread or cheese, she throws it on the floor.

Does anyone have suggestions for quick (really quick, like 5-10 minutes to make) meals that include veggies which are somehow hidden?  Extra points if she can self-feed it without a spoon or fork.

  • Cheddar Meat Loaf
    1 egg
    3/4 cup milk
    1 cup cheddar cheese
    3/4 c quick cooking oats
    1 medium onion, chopped
    1 medium carrot, shredded
    1/2 tsp salt
    1 lb ground beef
    2/3 cup ketchup
    2 Tbsp brown sugar
    1 & 1/2 tsp mustard

    In a large bowl, wisk egg and milk. Stir in the cheese, oats, onion, carrots and salt. Crumble beef over mixture and mix well. Shape into 8 loaves. Place in a 9x13 baking dish coated with cooking spray. In a small bowl, combine ketchop, brown sugar and mustard. Spoon over loaves and freeze.
    Thaw overnight in the fridge. Bake uncovered at 350 for 45 min or until meat is no longer pink and meat thermometer reads 160.

  • i add a veggie pure to things

    an example would be when i make him pasta with sauce i add in a carrot pure...

  • I've mixed carrot puree into mac & cheese, you could also hide purees in quesadillas, meatloaf, mashed potatoes, cookies, and home-made bread (MIL makes and freezes a few loaves at a time, sometimes I'm lucky enough to get a couple when she visits!!). 

    Deceptively Delicious is an excellent cookbook for this sort of thing.  It has a lot of great ideas and it really gets you thinking about how you can sneak in veggies.  FWIW the author still serves veggies on the side so that DC still has the opportunity to eat them...but since you know they're getting veggies hidden in the rest of the meal you don't have to make it a struggle. 

  • I add squash and cauliflower puree to mac and cheese. I also added squash and apple puree to banana muffins. They were great! Try mixing avocado with cottage cheese.

    I add butternut squash pur?e to grilled cheese and quesadillas; cauliflower pur?e to scrambled eggs, macaroni and cheese, and mashed potatoes; carrot pur?e to cheddar mashed potatoes; broccoli pur?e to hummus; and I also add broccoli or peas (not pur?ed) to macaroni and cheese.

  • tacos, quesadillas, mashed potatoes with cheese and whatever veggies you want.
