Do you ladies have any great veggie recipes? DH will eat green beans, corn, peas, and peppers. He'll eat broccoli with velveeta or in a casserole, mushrooms in a casserole, and carrots if they are cooked in something like stew or soup. DS loves peas, green beans, and squash (he's allergic to carrots). I feel like I make things the same way and I'm getting tired of it. Any good recipes using the above veggies or any good ideas to try out some new veggies with my picky family??? TIA!!!

Carrot and Rutabega This is an english dish but you make it exactly like mashed potatoes... chop, boil, mash with salt, pepper, milk and butter... I havent come across a person who doesnt love it
asparagus cooked with olive oil and kosher salt
sweet potato fries
my sister makes a pea salad... its peas, chopped eggs and onions and mayo... its really good and the only thing I will eat with peas in it
zucchini and squash marinated in italian dressing and then sauteed
veggie tempura, just buy the mix, its usually in the asian aisle and its so crispy and light
YUM!!
My FIL makes spinach with blue cheese and it is SO good
stuffed zuchini boats (my DH loves these)
roasted summer squash and zuchini w/ fresh oregano
carrot and raisin salad (Avery loves this)
peas and peanuts salad (also has celery in it...have made it for DH and I and just give Ave the peas)
African sauce - I serve this over rice (it's got cabbage, onion, yams/sweet pots) I can give you the recipe if interested...

I have a really easy (and really good) creamed corn casserole recipe. I also found an amazing fresh green bean recipe (balsamic vinaigrette and goat cheese) that I just made for Easter. Both were a hit with my family. I thought the goat cheese would be a stretch for my Dad and FIL, but they really enjoyed it.
