Can you freeze fresh vegetables?

I bought a bag of mixed fresh veggies, but I am the only on who eats them.  Can I freeze them and take them out as needed.

I *think* because of the high water content, you need to at least blanch them first to preserve their flavor. Otherwise, when you thaw them out, the will be all limp and icky.
