I'm planning the menu for the week and I need one more thing to make! It's on a day that I work, so it needs to be quick and easy. Crock pot ideas are good too. Any help?
Put boneless skinless chicken breasts in the crockpot and cover with your favorite BBQ sauce. Cook for a few hours and then shred the chicken with a couple forks. Let the chicken soak up the sauce for a little while longer. Serve on buns, and they are the BEST shredded BBQ chicken sandwiches.

In a casserole dish, combine about 2-3 cups cooked cubed chicken, one can of cream of something soup, 1/2 pint of sour cream and some gently steamed/boiled veggies (I use broccoli and yellow squash). Mix it all up. Then take stuffing (I use Stovetop, it takes about 5 minutes to make) and scatter it on top of the mixture. Bake at 350 for 25 minutes covered. Then remove the cover and cook for 10 minutes more till stuffing gets crispy. You can cook all of the ingredients way in advance and then just combine when you get home and stick it in the oven.
Take 4 BL/SL chicken breast or 8 BL/SL chicken thighs and put them in the slow cooker on low with 1/2 container of chicken broth, 1/2 cup of balsalmic vinegar, a clove of garlic chopped or pressed, about a tsp each of basil and oregano, and some fresh ground pepper. Put it on in the morning and by the time you get home it is fantastic. ?Serve it with a tomato and mozzarella salad and fresh bread and it is just fantastic!

Mix parmesan cheese, and some ranch dressing mix (the powder) in a bowl. Coat your chicken in butter (skinless breast works best for this) and then roll in the dry mixture. Place on a piece of foil and toss some more mixture on top. Wrap foil around (like a little foil packet) and bake for 30-40 minutes at 350.

If you don't have leftover chicken then cook up 3-4 boneless skinless chicken breasts and dice them or tear them into small pieces. Cook a family size package of vigo yellow rice (it's tastier if you use chicken broth instead of water) and when it's done stir in the chicken and a warmed bag of frozen mixed veggies. Soooo simple and the babies love it too
go to the kraft recipe page and find the Nacho Chicken Recipe- so easy and really good!! You just need chicken, salsa, sour cream, cheddar cheese, and corn/trtilla chips. Super fast & super good!

rice
put in crockpot
cook until chicken is done.
add more cheese if you want it cheezy.
