Make ahead meals?

DH is going to be traveling more than usual for the next two months.  I like to have meals that I have made ahead and just heat up for dinners since I work FT.  Any ideas?  Nothing for the crock pot, since I don't own one...

  • I like to make a baked pasta-

    pan-browned artichoke hearts(1 can), capers, ground turkey (1 pkg), simmered in 1 can diced tomatoes,  1 can tomato sauce, toss in some frozen peas or other veggies, season to taste, simmer for a bit, bake in oven over a layer of cooked pasta (cappilini or penne work great) topped with some shredded part-skim mozzarella until the cheeze is browned. 

    Can either freeze or not, whichever is more convenient.  Microwave or reheat in pan or toaster oven.  Yum!

  • Enchiladas are sooo good as leftovers. I love chili, and it's so versatile, too - I serve it over white rice, or with tortilla chips, or with all the fixings (green onions, sour cream, cheese).

  • I always have a batch of stuffed shells in the freezer along with dinner servings of spaghetti sauce.  Also, soup, stew, chili, meatloaf, mashed potatoes, cooked chicken, pork, and turkey, rice, pot pie filling, and store bought pie crusts for the pot pie, but they also work for quiche too.
