I'm making artichoke casserole for Easter and thought I'd share the recipe.
4 cans quartered artichoke hearts
1 jar quartered and marinated artichoke hearts
2 cans sliced black lives
3/4 glove of garlic, minced
1 24 oz canister of Italian style bread crumbs (you will use about 3/4 of it)
1/2 C grated parm cheese
1/2 C grated romano cheese
Extra Virgin Olive Oil
Drain and squeeze out 4 cans of artichoke hearts. In a large mixing bowl combine artichoke hearts, marinated artichoke hearts w/"juice", olives, garlic, 3/4 canister of bread crumbs, parm and romano cheese. As you are mixing drizzle generously with EVOO so that the mixture is moist but not soupy. The mixture should be wet, but not too wet. Coat the bottom of a casserole dish with a thin layer of EVOO. Put mixture in dish and bake at 350* for 1 hr.
**You can use more or less garlic depending on how much you like. I like a lot**
