I had a recipe to use some in a salad but it hardly made a dent in the package. I'd like to use the rest of it for a side with dinner tonight using ingredients I have at home. Any suggestions?
Do you like pesto? You can make pesto with arugula instead of basil... it's a bit different... a little more peppery but excellent on pasta (or anything else you'd put regular pesto on).

I'm not sure I have any pesto. Is Arugula like spinach? For example I make a spinach side where I put the baby spinach in a pot with some dressing and steam. Can I do that with arugula?
My favorite way to cook it is to saute red onions in a bit of olive oil until they are really brown and soft, then add balsamic vinegar (a few good sized glugs) to the pan. Let it reduce down until it's syrupy. Toss the arugala in until it is barely wilted - this will only take a moment or two. Remove it to a plate when it is still somewhat crisp - it will continue to warm and wilt. It is soooooo good!!

lol.... I meant you actually make the pesto out of arugula (you know, pesto is usually basil, olive oil, garlic, parmesean & pine nuts in the food processor - you can just sub in arugula instead of basil)... pesto on it's own wouldn't make much of a side dish - you'd need something to put it on
Arugula is kind of like spinach... it's just more bitter and kind of peppery, whereas spinach is pretty mild. I've never had it steamed though... don't know how well it would hold up. I usually make it into salad or stir it into a few different dishes at the last minute b/c it wilts pretty fast.
