I need an idea for something to make for supper tonight. ?I am bored with the same old stuff. ?I have a pound of extra lean ground beef at home. ?Any ideas? ?Keep it simple!

Brown the meat with Lawry's Seasoning Salt or some salt/pepper.
Add a can of corn (drained) and a can of diced tomatoes w/jalepenos or chiles (Red Gold makes these). Don't drain the tomatoes. If you don't have spicy tomatoes or don't like spicy food, use a can of plain diced tomatoes and add a little chili powder.
Add 1/3 cup of instant rice and stir in. Cover and simmer for about 15-20 minutes.

Here's a casserole I always bring to pot lucks
8 oz elbow mac, cooked
1 pepper and 1 onion, diced
a can of tomato soup
a 28 oz can of diced tomatoes, in their juice
1 lb ground meat, browned
Mix all the ingreds together and bake (or nuke) until heated thru

I've been on a ground beef kick since I found that DS will eat it.
Beef and Bean burrittos is one our go-to quick dinners.
-onion, garlic, olive oil, ground beef. (cook until brown)
-at LOTS of cumin, chili powder, hot peppers (to taste), salt and pepper. *if I dont have all the spices, Ill add a taco packet just to kick it up*
-one can of refried beans and 1c of corn.
Top with sour cream, cheese, and salsa. Delish!
easy peasy, healthy (I actually make mine with ground turkey), and makes great leftovers. I serve with tortilla chips and homemade guac as sides..
