Today I made chicken enchiladas in the crock pot. Turned out decent, but it was really missing that cheese sauce over the top. We used some cheese whiz and it was completely not what we were looking for. Anyone have a good recipe or recommendation?
You could sprinkle some cheddar cheese or monterey jack over the top, recover it and let it sit in the crockpot for another 30 minutes or so. That would give you the cheese yumminess you are looking for.

we did that, so I guess DH is looking for more. At this local mexican place they have a nacho-cheese kind of sauce, but it's not the canned nacho cheese. I guess I have a job for spring break now....learn how to make the cheese sauce for DH.

You could try using queso. Tostitos makes a pretty good queso you can get in a jar at the grocery store. Or, another really good cheese sauce is velveeta melted in the microwave with salsa mixed in it. Sooo good
