DS loves meats and carbs, but fruits and veggies are a problem for him. We've had some constipation issues due to lack of fruits/veggies, so the pedi recommended Miralax. We took him off of cow's milk except one Yobaby/day, which is fine b/c he still BF's morning, evening, and before his afternoon nap. The Miralax works, but it takes several days and is kind of hard to get down him. Does anone else have any spectacular ideas?

The Miralax shouldn't really be taking days to work. It sounds like the dosage isn't enough. Perhaps talk to your ped. about increasing the amount?
Also, we had to get creative in getting the Miralax into DD. (She has to take a TON: 9-10 teaspoons daily.) Our gastro told us that if you don't go over like 1 teaspoon, it is undetectable in food. So, we've mixed it in applesauce, sprinkled it in tomato sauce, etc. I've even put it in mashed avocado before.
