I'm trying to pick out an appropriate baptism cake. There will be non-denominational relatives at Ella's baptism and I don't want to offend anyone, but at the same time, I want it to have meaning and not look tacky. I also want to be able to make it, while I'm a good decorator, I'm not a professional. What did your cake look like?

Well, I haven't even thought about what the cake will look like. But we have picked out the godparents and discussed a few other details.
IMO, you are doing the baptism because of your beliefs. I wouldn't worry about people with different beliefs. They know that going to a baptism of someone of another/non denomintional that there will be differences. In this situation I would really go with what makes you happy.
I'm sure that if you have a cross cake they will just eat it and not be like "OMG a cross cake! Don't they know we don't believe in religious icons!?! HOW COULD THEY!"
Yea, I guess I should've though about their perspective, it's really silly that I would let that get in the way. I think I've found one browsing the web anyways.

I agree...it is your childs baptism and I wouldn't worry about what you write on the cake offending anyone
We got a $30 sheet cake from Costco. It had a cross and flowers on it and said "May God Bless..." then our babies name
just adding my two cents. If I were a guest I would not be offended at all and understand the arrangements, decor, reflect the family's beliefs/decision.
I think its very nice of you to take others into consideration though!

This is not the time to be PC - if you were going to a Bris would you be offended by the Jewish star? I've made cakes for Baptisms and what I usually do is make a white cake and then do a colored fondant cross (you could also do a dove) in the middle (very easy). I usually pipe - God Bless baby's name. Around the edge.

i can't imagine why someone would be offended by YOUR cake at YOUR child's baptism. If they disagreed with your religion so much - they should not be attending.
It'll be a cold day in hell when I'll worry about something at my child's baptism offending someone.
As for the cake- my son's was simple- with a cross- and said "God Bless Griffin"
I agree with the pp - if someone is invited to a Baptism, they should understand/expect religion to be a big part of the day, including the cake! The cake you found looks perfect :-) Ours was pretty basic, but I added a pic anyway:
