Babies on the Brain

Help.

I'm having two friends of ours for dinner and Wii tomorrow evening.  Since its a Friday in Lent and we are all Catholic, we decided to just do pizza, but I thought I'd make a really great dessert to go with it, so it doesn't look like I'm a total slacker host. 

 Problem...I don't know what to make.  Any suggestions?  I'm not to shabby of a baker, so I don't mind if its a little harder on the difficulty scale!  Thanks!!!

  • Is there anywhere near you that sells cannolis? They go well with pizza :). Alternatively brownie sundaes are always a hit!

  • If I were you I'd tackle a cheesecake.  YUM.

    Alternatively, there was a recipe on the nest of all places a while back for chocolate truffle pie or something.  Essentially a pie ( I switched to chocolate cookie crust) and varying mixtures of chocolate and heavy cream in layers.  Also YUM.  I can try to find the recipe if you want.

  • i have a made from scratch chocolate cake and fudge frosting recipe that i usually top with raspberry's or strawberry's!  It's a hit everytime...i could email you the recipe this evening when i get home...don't have it with me at work, but is it fantastic...comes out moist and since a lot of the batter is whipped the cake is fluffier and looks bigger than a normal box cake...it's my go-to....goodluck....i hope you find something great!

    That's fantastic.  I love pampered chef!  Just something really indulgent and delicious!

  • Brownies are good and easy. Sometimes I make devil's food cake, instant chocolate pudding, and buy cool whip (the tub in the freezer, not the can). Then I slice up the cake into cubed pieces and put them into the serving bowls. Put a scoop of pudding, then a scoop of cool whip on top. Its like, super easy, individual?trifles (sp?).?

  • Strawberry shortcakes. You can just buy the cakes, whipped cream and strawberries and assemble them. Super easy.

  • The "three step cheesecake" is easy and delicious - go to the Kraft or Philadelphia cream cheese website for specifics.  We add white chocolate to ours... yum yum

  • What about a brownie and raspberry trifle? It's pretty simple to prepare but it's visually appealing/looks like you put a ton of effort into it for company. I'll pull up the recipe if you want. :)

  • espresso parfait:

    lady fingers

    amaretto cookies

    espresso or really strong coffee

    Kahlua

    sambucca 

    masarpone

    ricotta (creamy)

    sugar

    mix the coffee, Kahlua, sambucca - set aside (dark mixture)

    mix the sugar, marsarpone & ricotta. i add the sugar little by little depending on how sweet i want it. (white mixture)

    crush the lady fingers and amaretto cookies together (cookie mixture)

    layer the white mixture, then cookies, the dark, white, cookie, dark. keep going until cups are full. i usually serve them in martini glasses but you can make a big bowl of it and just scoop out servings.

    fridge for at least 2-3 hours. top with some cocoa powder and cinnamon.

    if you can get a hold of some chocolate covered espresso beans they look great on top

    you can also muddle some fresh raspberries in with the dark mixture.
