Because I'm loving baking lately! It's all about muffins and cupcakes. The other day I made kiwi muffins and now we have pears and bananas on the verge of going over ripe so I think I'm going to make these...

I want to make them fairly healthy so I'll be replacing any oil with applesauce and any buttermilk with yogurt. I think I'll add some bran and oatmeal in there and only use WW flour. I like that I know exactly what I'm feeding my kid rather than stuff from a box and it's so much fun to bake with him now, he's actually fairly helpful!

I recommend substituting baby prunes for the oil in a recipe...it works even better than applesauce in my opinion!
I really wish that I was good at baking...I tend to do exactly the right thing to screw a recipe up

oh my gosh, me too!! i never bake..mostly bc i suck at it...but yseterday i finally made dinner (our house has been a mess with some remodeling projects recently) and just whipped up a lemon cake for no reason. i don't typically even like or eat sweets. H is beside himself and thinks it's hilarious. i think he assumed i made it for work or something and he's like...oh, you just needed a snack? haha.
everything lemon sounds delicous to me right now. mmmmmmmm and cranberry juice. strange!

I think I'm going to make one of these tonight too, if I feel up to it. I'll have to go grocery shopping with J and that just might be all I can handle, although I'm feeling a bit better today.
I already have a couple bananas in the freezer and 3 more on their way out, along with like 5 pears! I need to get on all this fruit, fast!

Ground Almond Flour is way better than Whole Wheat flour for baking. ?The results are way more moist and flavourful.
I'm having fresh Brioche right now though with slivered almonds. DELISH.?
I haven't hit the baking stage yet, but I have cooked more in the last two weeks than I did in all of 1st tri. I'm getting a freezer for my birthday in a few weeks so I'll start the baking then.
Where do you get most of your recipes with WW flour? I have avoided baking except for special occasions because we try to avoid white flour as much as possible but I don't have any reliable recipes with WW flour.
I've used almond flour, but don't get very good results when I completely replace. But thanks for the reminder, I can do at least half and half and they'll come out good enough and will really up the protein!

I just replace any flour with WW flour, I don't even buy plain white flour...and like Red just mentioned, you can do almond flour as well for atleast part of the flour amount. There are actually tons of flours out there, but you have to experiment with them all to get the results right, I have not had the time or patience to do that so I stick to WW flour. I have friends that use all kinds of yummy stuff in their recipes, especially to make the gluten free or vegan...there are so many things to try out there!
