We just had almond crusted chicken fingers and it was pretty good. I made a lot of them so the next day we used the extra pieces and put it on salad. And instead of the lemon basil sauce, I made my own honey mustard.
Honey mustard sauce:
Mayo (about a 1/4 cup)
hefty squirt of spicy brown mustard
and a squirt of honey
Here is the recipe for the chicken fingers. I put a little bit more spice on my chicken.
1 1/2 cups sliced almonds -- lightly toasted (I didn't toast them) 4 boneless, skinless chicken breast halves salt and pepper 1/4 cup all-purpose flour 1 egg -- beaten with 2 tsp.water 1/4 cup butter -- melted 1 teaspoon lemon juice 1 1/2 teaspoons chopped fresh basil -- or 1/2 tsp. dried
With hands, lightly crush almonds into small pieces; reserve. Lightly flatten chicken breasts. Season with salt and pepper. Dredge chicken in flour. Pat off excess flour. Dip chicken in beaten egg. Press each chicken breast in almonds, covering chicken well. Place on buttered baking sheet. Bake at 425? for 10 to 15 minutes or until chicken is just firm and almonds are golden. Meanwhile, combine butter, lemon juice, and basil. Drizzle over cooked chicken breasts.

Friday: White bean chicken chili over rice
Saturday: Homemade chicken tenders with homemade mac and cheese and fresh veggies
Sunday: Crockpot BBQ pulled pork with texas toast and whole green beans and smashed garlic potatoes

Well, here?s what we did recently. Each of these took less than 30-45 min prep and cook time:
Calzones (Ground beef or sausage, marinara sauce, cheese and pizza dough) and salad
Ground turkey tacos w. guac, pico de gallo, black beans, etc.
Skirt steak fajitas?used the accompaniments from the previous night, but just made rice
Chicken stir fry (use leftover rice)
Pasta with vegetables, garlic pesto foccacia bread (Stop & Shop?s artisan breads?yum) and salad
Pizza takeout
Fri: Pioneer Woman Best Salad Ever and Roasted Chicken
Sat: Greek Turkey Burgers and Fried Sweet Potatoes
Sunday: DD's Birthday party so anything goes!!!!
Monday: Spinach and Strawberry Salad with Grilled Salmon
Tues: Greek Salad and Falafel pitas
Wed: Red Beans and Rice with cornbread
Thur. Rotisserie Chicken and Salad
Fri: Chili and Cornbread
