Dinner ideas please? (Sorry, I know this is annoying)

I am trying to plan for next week b/c we are going away this weekend.

Sorry this is annoying, but please share your 'menu' or dinner ideas.

    breakfast for dinner...eggs and bacon or a breakfast casserole

  • Recently, we've had chicken enchiladas, pork tenderloin,  glazed salmon, chicken tetrazzini, corn chowder, butternut squash soup, bbq'd brisket, sloppy joes, breaded pork chops and  chicken breasts stuffed w/ sundried tomatoes, cheese and pesto.

  • DH is OOT, so we're going pretty easy on dinners this week. He's diabetic, so I do lots of carb things when he's gone.

    I'm going to make either chicken noodle casserole or homemade mac & cheese for dinner tonight.

    I think we'll also have stuffed shells and Chinese takeout.

    homemade veggie pizza
    chicken ceasar salad
    paremsan crusted tilapia
    teryaki chick
    mexican lasagna

    Sorry, not many of those are dairy-free!  When I was dairy free we ate a lot of stir fry, grilled meats with roasted veggies, salads, etc.

  • Here is our meal list for this week:

    Monday: Goulash with side salad and garlic bread

    Tuesday: Sliders (mini burgers) corn on the cob and sliced tomatoes and cucumber salad and baked beans

    Wednesday: OUT (weekly dinner with my parents)

    Thursday: Tacos and Margaritas

    Friday: White bean chicken chili over rice

    Saturday: Homemade chicken tenders with homemade mac and cheese and fresh veggies

    Sunday: Crockpot BBQ pulled pork with texas toast and whole green beans and smashed garlic potatoes

     

  • We just had almond crusted chicken fingers and it was pretty good.  I made a lot of them so the next day we used the extra pieces and put it on salad.  And instead of the lemon basil sauce, I made my own honey mustard. 

     Honey mustard sauce:

    Mayo (about a 1/4 cup)

    hefty squirt of spicy brown mustard

    and a squirt of honey

    Here  is the recipe for the chicken fingers.  I put a little bit more spice on my chicken.

     1 1/2  cups          sliced almonds -- lightly toasted (I didn't toast them)
    4 boneless, skinless chicken breast halves
    salt and pepper
    1/4 cup all-purpose flour
    1 egg -- beaten with 2 tsp.water
    1/4 cup butter -- melted
    1 teaspoon lemon juice
    1 1/2 teaspoons chopped fresh basil -- or 1/2 tsp. dried

    With hands, lightly crush almonds into small pieces; reserve.
    Lightly flatten chicken breasts. Season with salt and pepper. Dredge
    chicken in flour. Pat off excess flour. Dip chicken in beaten egg. Press
    each chicken breast in almonds, covering chicken well. Place on buttered
    baking sheet. Bake at 425? for 10 to 15 minutes or until chicken is
    just firm and almonds are golden. Meanwhile, combine butter, lemon
    juice, and basil. Drizzle over cooked chicken breasts.

  •    Well, here?s what we did recently. Each of these took less than 30-45 min prep and cook time:

    Calzones (Ground beef or sausage, marinara sauce, cheese and pizza dough) and salad

    Ground turkey tacos w. guac, pico de gallo, black beans, etc.

    Skirt steak fajitas?used the accompaniments from the previous night, but just made rice

    Chicken stir fry (use leftover rice)

    Pasta with vegetables, garlic pesto foccacia bread (Stop & Shop?s artisan breads?yum) and salad

    Pizza takeout

  • Fri: Pioneer Woman Best Salad Ever and Roasted Chicken

    Sat: Greek Turkey Burgers and Fried  Sweet Potatoes

    Sunday: DD's Birthday party so anything goes!!!!

    Monday: Spinach and Strawberry Salad  with Grilled Salmon

    Tues: Greek Salad and Falafel pitas

    Wed: Red Beans and Rice with cornbread

    Thur. Rotisserie Chicken and Salad

    Fri: Chili and Cornbread

    english muffin pizza's and fresh fruit salad

    that's it so far.
