Hmmm...we don't eat mac and cheese! hahha! But, my mom sometimes makes a mac and cheese dish that is awesome. Like, for holidays and stuff. She puts butternut squash in along with I think, cheddar. She bakes the squash, and then scoops out the puree and mixes it in with the macaroni. It adds some nutritional value, and the puree is silky so you don't even notice it. Its really amazing,honestly.
Just wanted to throw that out there. I suggested it to my SIL, because my nephew ONLY wants to eat mac-n-cheese. I would imagine you could probably add lots of things, like, steamed carrots mushed up or sweet potatoes. Just a thought.
I second the roux. It's super easy and just takes a couple extra minutes. If you're in a real hurry, American cheese melts smooth because of the high oil content (yummy?).
Other times I add shredded cheese and yogurt together in a pot, melt, and add that to the macaroni ... rather than using butter & milk. Its a little tangier, but I think its delish! If I bake it I just use a wad of cheese and butter.
"Super Baby Food" has a good recipe that I use that is pretty much a mixture of shredded cheddar and cottage cheese mixed together. The cottage cheese helps make it creamy.

BTW, I swear by this site. I just look for a recipe and then sort by ratings. If it's got over 100 and is 4.5-5 stars, I know it's good. It has never let me down
