It's pretty easy to make and yummy but not too healthy. Even though it says tex-mex they don't even serve it in many restaurants in texas. I've seen it RARELY. Most people make this at home, but it isn't popular as a tex mex item on a menu.
My recipe is much like this one, but I boil the chicken - even if its boneless. boiling the chicken makes it easy to shred up, but really I just have chunks of chicken either shredded or diced as it says.
