Lenten Nesties: your meatless meal suggestions?

I always forget our lenten standards from year to year.  So post your so I will have a list of meatless meals to get me through the next 6 weeks.

Tonight we will have tuna noodle casserole--a family joke to kick off Lent.

Then we will have:

bean and cheese burritos

ratattouille (a roasted vegetable stew)

fish & chips

baked salmon with mojito sauce

I can't think of anything else.

  • today is a meat free day huh...opps.  I thought I was being so great assembling a soup for DH and the kids since I'll be working late....too bad it has ham in it....

    ditto this.  we go to a fish fry in my hometown during lent occasionally - my parents, their friends and all the other crazy Catholics I grew up usually go too - but it's mostly a social thing for me, because fish, in almost any form, makes me want to gag.  I will eat shrimp on occasion, though.

    Yeah, the only fish I can stand is walleye practically right off the hook.  It doesn't taste fishy when it is that fresh.  But I would still rather go meatless than eat fish of any sort.

  • we are big seafood eaters, so, anything seafood goes with us, scallops, shrimp, salmon, talapia, follow any pasta recipe & sub seafood for meat.  Works out well.  Also, I make any pasta recipe and leave out the meat & serve with a garden salad. 

    Roasted vegie quesadilla, vegie burgers (sounds gross, but, no to bad). I also look thru the web recipe sites for vegatarian recipes and try a few new things.

     

  • Tonight we are having 4 cheese ravioli, garlic bread and a yummy salad.  We usually do the cheese pizza, tuna melts & fries, pasta and repeat plan.  We are boring.  I actually like a lot of different seafood (mostly shellfish) but my husband hates it and DD is only 12 mos, so we have not tried it yet.  Oh well.
