4 chicken breasts, pounded thin (I use the thin cut ones from the meat dept)
1 smallish onion, sliced
1/2 c apricot or raspberry preserves
1/4 c balsamic vinegar
1 tsp dried rosemary, crushed

Sautee the onions over medium heat in a pan sprayed w/ cooking spray until soft (about 5 mins). Add chicken breasts and cook about 5 mins/side, or until cooked through. Remove chicken and add vinegar, preserves, and rosemary. Cook until preserves melt. Add chicken and simmer until heated through. Serve sauce over chicken breasts.
I usually serve it with white rice and a green veggie. It's delish!?
