anyone made amaranth? I bought the grain today, but I'm clueless on
how to make it. Do I cook it in water and then refridgerate? or can I
just mix it with water or whatever and serve like the rice cereal? Do
I freeze it?
does it say on the package? i could help you if i was home because my williams-sonoma babyfood cook book has a recipe for amaranth. you have to let me know how it turns out and if your dc likes it. gl!

Here is a recipe from cooking for baby. It is for amaranth and plum swirl, but here is just the amaranth part...
In a saucepan over high heat bring 1 1/2 cups of water to a boil. Add amaranth (1/2 cup) and bring back to a full rolling boil. Stir cover and reduce heat to low. Cook, stirring occasionally with a whisk until water is absorbed, 18-22 minutes. Amaranth will be translucent, thick and sticky.
If you want the rest of the recipe it is...stir in plum puree or for older babies mashed or cut up pieces of plum. refrigerate up to three days or freeze up to three months.
And yeah - the only grain that is a complete protein is what drew me to it. My daughter is allergic to just about everything, so I'm trying out the food that give the most bang for your buck.

amaranth is a grain (a seed actually, i think) and the only grain that is a complete protein.
