White cake

recipes - anyone have one? I have a cholocate cake recipe but usually end up just using the box for the white.....I would like a good white one now.

  • Tender White Cake (it's one of the best white cake recipes i've used)

    2 3/4 Cake Flour

    1 1/2 cups plus 2 tablespoons sugar; (superfine) is best

    1 tablespoon baking powder

    3/4 teaspoon salt

    3/4 cup (12 tablespoons) unsalted butter, softened

    4 large egg whites + 1 whole large egg

    1 cup full-fat vanilla yogurt or 1 cup whole milk

    2 teaspoons vanilla extract

    2 teaspoons almond extract

    Mix all the dry ingredients for two minutes on slow speed, to blend and aerate. Add the soft butter and mix into a paste. Add the egg whites, then the whole egg, beating after each addition to begin building the structure of the cake. Scrape down the sides and the bottom of the bowl periodically. (you can pre-whip the egg whites & fold them in if you want- but you actually don't need to with this recipe)

    In a small bowl, mix the yogurt (or milk) with the vanilla and almond extracts. Add that mixture, 1/3 at a time, to the egg mixture. Beat 1 to 2 minutes after each addition, until fluffy, scraping the sides and bottom of the bowl.

    Pour the batter into greased and floured or parchment-lined pans (two 8- or 9-inch, one 9-by-13 inch, or 20 to 24 cupcakes). Bake the cake(s) in a preheated 350-degree oven for 25 to 30 minutes (for 8- or 9-inch pans) or 23 to 26 minutes (for 9-by-13 inch pan) or 20 minutes (for cupcakes). Remove from the oven, cool and frost.

    • 1 1/2 cups all-purpose flour
    • 1 3/4 teaspoons baking powder
    • 1/2 cup milk

     

     

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.

    1. In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
    2. Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
