Cultured vs. Pasturized

Are they the same?  I ran into this question while checking out cottage cheeses at the food store the other day.  Out of all the ones they had most of them were made with "cultured" milk while only one was made with pasturized.  The one that is pasturized has a sweet flavor to it and I hate it!  Can I eat the ones with cultured milk?  thanks!

Re: Cultured vs. Pasturized

  • This is what I found from the National Dairy Council. Sounds like you're fine:

Sour Cream or Cultured Sour Cream. Sour cream results from the culturing of pasteurized cream with Streptococcus lactis until the acidity is at least 0.5%, calculated as lactic acid. Rennet extract may be added in small quantities to produce a thicker-bodied product. Cultured sour cream must contain not less than 18% milk fat (unless nutritive sweeteners are added, in which case not less than 14.4% milk fat must be present).
