When I've made them, I just cook some chicken and shred it. ?Mix it with some taco seasoning and a little enchilada sauce. ?Put some sauce on the bottom of a baking dish. ?Roll chicken mixture in tortilla shells and put them seam down. ?Top with enchilada sauce and cheese, and bake until bubbly! ?Sorry it isn't more precise. ?You could also cook the chicken with some diced onion for more flavor.

I like Racheal Ray's easy cheesy enchiladas. I usually add chicken though. They are very easy and you can find the recipe on her site or food networks.
I just use the recipe on the back of the Old El Paso enchilada sauce can. It's not fancy at all but it's good! That's what we're having for dinner tonight.
I love green enchiladas. I cook up the chicken in seasoning salt and cumin (plus a little oil). Fry corn tortillas in a hot vegetable oil to soften, one at a time for a few seconds, then place on plate with paper towell to drain excess. Roll the chicken in the softened corn tortillas, coating each side of the tortilla with green enchilada sauce, seam down, and pour extra sauce on top. You can add shredded jack cheese on top for the last 5 min of cooking if you like. Cook long enough to heat up, about 15-20 min. Serve with sour cream and fresh cut cilantro on top

Google "Jessica Alba's chicken enchiladas." It was in a magazine once and I tried them recently--in fact, I just made them again last night--and we love them! Too bad consuming them won't make me look like her...
