My absolute favorite is: whole wheat english muffin with light Laughing Cow cheese, & a Morningstar sausage patty. It's wonderful & super filling, but I eat it pretty much every day.
Steel cut oatmeal. I don't like regular oatmeal all that much, but the steel cut kind has a really nice texture. I top it with a tiny bit of milk, a handful of walnuts, some dried cranberries and some maple syrup.
Yum to all the suggestions so far! I usually eat a whole-wheat bagel topped with peanut-butter. Sometimes I add half a banana for fun. Or, I make an egg-white scramble with tuscan-style veggies(peppers, mushrooms, and onions) and some shredded cheese.

Quaker Cinnamon Swirl Oatmeal (I recently started eating the high fiber stuff they sell--stays with you for a long time)
Frosted shredded wheat
A homemade egg mcmuffin -- use whole wheat English muffin
Whole wheat English muffin with PB -- or preserves and a slice of cheddar cheese on top of the preserves (I know it sounds gross and my H practically gags when I eat it, but it is the perfect mix of salty and sweet and gives you a protien boost -- a lot of my cousins eat it because my g-ma always ate it so we grew up w/ it.
Re: What's your favorite healthy breakfast?
Oatmeal with dried cranberries or raisins, chopped walnuts or almonds, and honey
Wheat English muffin toasted with cheese and with an egg (like a homemade Egg McMuffin minus all the crap for you and the meat)
Mine are boring, but quick:
