Monday&Tuesday leftovers. Wednesday pulled pork sandwiches thursday maybe pork chili verde friday leftovers Saturday and Sunday eat at family gatherings
I don’t have a specific day for these meals planned but I have groceries to make:
1. Beefy mushroom meatballs with noodles and broccoli 2. Cajun chicken sweet potato stew 3. Poppyseed chicken with mixed veggies and rice 4. Instant pot Creamy Italian chicken with pasta and broccoli 5. One pot cheesy beef and shells with broccoli
I need to be transparent about the fact that I am not the cook in our house. But I do assist sometimes and I help with decision making! So we’re having: cookie and Kate’s sweet potato black bean enchiladas salmon, maple roasted Brussels sprouts, and rice
and we are pretty serious bilk cookers so we’ll alternate between these two meals until Friday when we’ll be at my parents’ for xmas
Tonight is charcuterie because I'm lazy and Aldi had stuff on sale for it when we went grocery shopping earlier today
Tomorrow is steak fajitas because we bought a quarter cow over the summer and despite my request for mostly ground beef, we got four thousand steaks so I'm having to branch out in my cooking
Wednesday will be an egg scramble and Yummy Toddler Food's Grinch pancakes because that's the only way vegetables have sounded remotely appealing
Thursday my parents will be over for dinner so we'll do a slow cooker mulligatawny chicken soup with a fruit plate
I’m inspired by all of these meals. I’ve struggled to even sit down and fill out a grocery order lately, never mind cook and eat anything. I’m usually the one meal planning and cooking, and I don’t even have an appetite. Last night we had soup from the grocery store deli lol.
Falafel and enchiladas are inspiring me to try harder. Those sound good. The only food I’ve wanted to eat this week is chocolate chip cookies and that’s not sustainable. We’re going to do chicken tacos tonight
