@seeds_of_joy ๐๐๐ Iโm currently on a mostly ketogenic like diet because Iโve been managing my blood glucose within tight parameters. Iโve remained gluten free which is not hard when low carb anyway. With pregnancy, Iโve actually reintroduced foods I was previously sensitive to such as dairy and eggs and seem to be tolerating them well. Wish I was eating lobster but it has a tendency to be high in mercury. So Iโm avoiding that. But Iโve been eating plenty of shrimp! ๐
@ttc3y that's awesome that you can eat foods you couldn't before! Especially being on the keto diet... otherwise it would be meat and veggies pretty much. I think that's why I need my carbs. I would go nuts if it was just meat and veggies. At least I can eat oats and rice and things. I guess about 80 + percent of people are sensitive to wheat anyway so most people are better off without it probably.
@seeds_of_joy Oh, I definitely miss my carbs and sweets. But, I have found ways around it. Stevia has been a huge help to sweeten my teas and chocolate mousses. Hรผ chocolate bars are a god send and they donโt spike my sugars. They are also dairy free, egg free, gluten free and soy free. I eat keto noodles, rice, and pasta made out of a yam. I even have played around with kelp noodles. I refuse to let my dietary limitations make me feel deprived. Just yesterday I made keto blueberry muffins with almond flour and lakanto monk fruit maple syrup. With the help of the internet, Iโve been able to find ways to satiate my sweet and carb cravings without causing blood sugar issues and Iโm not limiting my calories either. I eat as much as I want when Iโm hungry.
@ttc3y I use stevia a lot too since I have a yeast overgrowth that I definitely want to get under control. It was really hard finding a chocolate substitute with no sugar, soy, milk, almond, peanut,ย or cashew for me. I finally found one but it's pricey so I only get one bar a week. We live in a smaller town so we're somewhat limited but some things I can order. My doctor said I can eat limited amounts of sugar as long as I try to stay away from came sugar (which apparently is the devil). How do the yam noodles taste? That's one I don't think I've ever come across!!
@seeds_of_joy I would say the keto carbs made from the yam are pretty tasteless. The texture is just different which is a more โbouncyโ and jelly like texture but there are foods that I grew up with a similar texture that I like, so it doesnโt bother me at all. ย Eating the keto carbs may actually help the yeast issue. One of the brands is called Miracle Noodle. Thrive has one as well called Shirataki noodles.ย
I discovered a loophole in making puppy chow so that just about anyone can eat it...even if you're gluten free, dairy free, low sugar, nut allergy. I found a way to substitute everything!! Even the topping can instead be arrowroot powder mixed with stevia and a little coconut or raw sugar if you're not completely sugar free. I use Lilly's dark chocolate chips made with stevia and no milk, vegan butter, and sunbutter. Finally, a craving I can fill.
I just made the most delicious chicken enchiladas with red sauce for the first time yesterday. I swapped the flour tortillas with coconut tortillas for my gluten free/ low carb dietary restrictions and it came out muy delicioso! It was accompanied with Mexican grey squash, Pico de Gallo Salsa, and Black beans with Cotija cheese. It also took me 3-4 hours to make the meal from scratch. I ate the leftover chicken that was marinated in the red sauce, cumin, and salt with no tortilla or cheese with the black beans and salsa for dinner tonight. It tasted great! I found one recipe that replaced the tortilla with zucchini that looked interesting as well.ย
