🐟 Meal Plan Monday w/o Jan. 11

Hi ladies. What are we eating this week?? Any fun recipes?

Also...any interest in doing a separate "freezer-friendly" recipe prep for postpartum thread? STM+ can share what's worked for them, we can share freezer-friendy recipes and snacks to have on hand for those exhausted first few weeks, and FTM can share what they've made or done for other new parent friends.

Leave a comment on whether that would be helpful and we can do that in the next few days / next week.

  • Last week I did pretty well and made 3 out of the 4 planned meals, so hoping I can keep that momentum going this week -

    Monday - leftovers
    Tuesday - shredded BBQ beef sandwiches
    Wednesday - tuna noodle casserole
    Thursday - falafel
  • I'm trying to eat a smaller dinner and work in a bigger snack sometime around 3/4pm. I'm feeling snacky during the day, too, so I loaded up on a healthy trail mix blend and clementines in this week's groceries.

    Also, our apartment building just partnered with a same-day grocery delivery company that doesn't charge a delivery fee and they gave us a $10 credit for signing up. I'm so excited. Just tried it out to order another serving of fish for meal #1 below. Hubby might never need to run to the store again 😂.

    Meals

  • Definitely interested in a freezer prep thread, but my freezer is super tiny. So I would also be interested in a food prep list. A grocery list of easy to prepare foods to have on hand for easy meals. Or maybe even those recipe jars, for soups or baking, then you just pour it in an cook it. I think I should get a crock pot before the baby is born. 

    So I´m totally up for a food prep thread.
  • This week we did slow cooker rkbs with mash potatoes, homemade mac & cheese and spicy California shrimp stacks. When I made the meal plan I was craving sushi and comfort food and this is where we ended lol.

    @Liz101015 omg those all sound amazing. Do you have a recipe for the shrimp stacks? (I was craving sushi after hubby got some this weekend, so ordered some veggie & shrimp tempura sushi on sat night.)

  • Tonight is leftovers (chicken, potatoes, broccoli)

    Tomorrow will be steak spice and maple syrup salmon with rice and brocoli 

    Wednesday will be burgers (veggie or pork, not sure yet) with a side TBD

    Thursday, I'd like to make something with either the shredded duck I have or duck strips, will have to find a recipe!

    I don't have much of a plan for the rest of the week 🤷‍♀️

    So this is for peking duck wrappers, so I don't know how it would be with your duck. But I tried these wrappers in November and it was really good. But a little bit of work. (To be honest I think a crepe recipe would actually work too. It felt like I was wrapping up everything in a crepe.)

    Basically you add some 2 inch strips of leek or spring onion, slices of duck and a sauce if you want, all wrapped in the wrapper.

    @mimser If you're from Montreal then you can make crepes to wrap them if you're lazy. Do you eat crepes? If so, what is the best kind you've ever had? 
  • @littlelibelula I do eat crepes, but mostly for breakfast. It's rare I have a salty crepe, sometimes when I go out for brunch. I have two favourites, my #1 is the basic buttery crepes with a lot of maple syrup and nutella with bananas and strawberries 
  • We didn’t make everything that was on my menu last week, so recycling some of those recipes for this week:

    Monday: Greek lemon chicken and rice (https://www.thechunkychef.com/one-pan-greek-lemon-chicken-rice/) with sautéed asparagus and crescent rolls
    Tuesday: Korean beef bowl over rice
    Wednesday: Eggs, breakfast sausage, toast, fruit....maybe pancakes too? 
    Thursday: Crockpot Salsa chicken (I usually serve this over rice but will probably do mashed potatoes since we already had rice 2x). I love this recipe bc it’s so easy—literally just put chicken in the crockpot, pour a jar of salsa on it (I like to use “fruity” flavored salsa, like peach or mango), cook on low 6-8 hrs or high 4ish hrs, then shred
    Friday—chickpea avocado mash (mash chickpeas and avocado together, season with salt, pepper, garlic powder, onion powder. Add chopped red onion and crumbled feta, lemon juice. Serve on a wrap with whatever toppings you want—I usually do tomatoes, spinach or lettuce, and more feta)
    Saturday—Instant Pot Potato Corn chowder (https://damndelicious.net/2018/02/17/instant-pot-potato-corn-chowder) Haven’t tried this recipe before but it sounded good! 
    Sunday—hubby wants plain cheese pizza 🤷🏻‍♀️ I will probably make it instead of ordering takeout

    anyone else plan recipes around the weather forecast? I wanted soup one night this week so I looked at the forecast and picked the coldest rainiest day lol
    Also I would totally be into a freezer friendly thread! We have 2 turkeys and a rooster left to butcher plus our cow is set to be butchered April 1 so I’m already excited about the thought of a freezer full of meat/less grocery shopping!

  • @nsk489 That corn chowder looks good. The only thing on our meal plan this week is too eat corn. In an attempt to have the shopping trip last 6 weeks I bought the extended family size can of corn and now it is pretty much the only veggie left in the house. Although, now that I think about it, it's one of those veggies that counts more as a starch than a veggie.
