Meal Plan Monday! w/o 12/7

Alrighty, we made it to another week! How are you nourishing yourself and baby this week? Any cravings?

    I’m finally back in the kitchen and so happy the food aversions / exhaustion of 1st tri are behind me. Here’s the full plan...this is going back to how we used to eat before pregnancy. I like to do a big prep session on Sundays, so all the veggies/dressing/marinades/grains that could be prepped ahead are all done.

    Dinners
    1) Avocado Kale ceaser with sheet pan broiled Salmon:

    4) roasted veggie / grain bowls (squash, brussels, carrots, cauli) over rice w/tahini, lemon juice, maple, and olive oil for drizzling. Optional sub falafel for rice: https://pinchofyum.com/the-ultimate-winter-bliss-bowls

    Lunches

    3) quiche w jack cheese, mushrooms, spinach - no recipe, used a pre-made pie crust leftover from thanksgiving 

    Brekkies
    1) savory oatmeal w/ scallion w/egg. Mix in bone broth / collagen. 
    2) oatmeal w berries and nuts

    I admit, I ordered from my friend’s catering and meal delivery this week. And I have leftovers from the weekend, so it’s simple heating and serving this week! 

    Monday- Dim sum leftovers 
    Tuesday- beef stroganoff and broccoli 
    Wednesday- chicken pot pie
    Thursday- Zips toscano and biscuits 
    Friday- salmon and stir fry veg

    This week we bulk made baked ziti and spicy chicken with cilantro rice.

    @yellingbanana this is a judgement-free thread!  :D I’m already looking at other delivery services to prep for 3rd tri when I start getting tired again. I really want to figure out no/less-cooking ways to eat well so that we keep that up after baby gets here. We’ll need all the nutrients and energy we can get then. 

    On that note, has anyone tried CookUnity or is that more of a local NY/NJ one? Meals look really good and they have great veg and meat options so me & hubby can eat different things when we want.

    DH is making a chicken stir-fry tonight. That's as far as I've gotten.
    We have the ingredients for a dairy-free lasagna, so if either of us can find the energy that should make the menu one night this week.

    Tonight is Sicilian sausage with spinach, beets and caramelized apples
    Tomorrow will be duck burgers with salad and sweet potato fries
    Wednesday - salmon with steak spices and maple syrup, with rice and brocoli 
    Thursday - I have a frozen meal of ravioli and beef cubes, I think we'll have that 
    Friday - steaks with mashed potato and a vegetable, maybe more brocoli

    We cooked a gumbo yesterday, that's about as far as I am in meal planning.  That will take care of dinner for a few days.  However we talked about going back Hello fresh.  It's easy and not too expensive for us.  When I got on their site to check it out, they are doing a special for healthcare workers.  First box 50% off and 15% all others for a year, excluding anything not in the regular box. So we will likely do that next week
