I’m supposed to be hosting my first thanksgiving this year and I’m so nervous considering how crappy I feel. I need to start working but that’s obviously not going to happen. I guess we could just order everything but we love to cook so...
@Omie_Wise Could you ask others to help or bring things with them? You could also strategically plan to cook a few things that you/your family are very picky about and then outsource some of the other stuff and order out. Prior to my dad getting excited about cooking (I think he's going to take care of the turkey, stuffing, gravy, and carrots for me...which is like half the meal) I was debating ordering a pre-made (or at least a pre-prepped) turkey. If none of that is an option, start early and take it slow. Turkey probably needs to be made that day, but most other things can be done ahead of time and either finished or reheated in the oven on the day-of. Can slowly pick a dish-a-day to prep/cook and freeze or refrigerate. Finally, don't overstress. What are the 2-3 dishes you can't live without? Prioritize those, and it's ok if not all the rest get done.
@Omie_Wise *lurking from week 1* I have been able to get my Thanksgiving meal so I prep at lot ahead of time, and have it ready to throw in the oven. We do dinner time for the turkey, so that gives a lot of extra time vs. a noon or mid-afternoon meal. I have been doing the Thanksgiving meal since DH and I got married in 2011, plus before that I did a Easter dinner for all of our grad school friends for 3 years. Here are some of my strategies for not having to everything right before dinner:
1. Crockpots/slow cookers are your friend!!! (and not just for chili)
I have a great cheesy onion and chive smashed potatoes recipe for the crockpot, so I can get that done without standing over the hot stove during the frenzy of carving and dishing up.
I make DH's favorite cheesy broccoli and cauliflower side dish in my other crock pot (we have several of different sizes for out pre-kid life when we use to entertain more.)
I try to use the crockpots as much as possible so we aren't fighting to get everything on the stove top while the turkey is coming out and getting carved. If you don't have set recipes, try an internet search find ones that use a slower or have a slowcooker option.
2. Make it ahead and refrigerate.
We stuff the turkey, but stuffing is a family favorite, so I always do a triple batch an put the rest in a glass backing dish in fridge to cook after the turkey comes out to rest and cool.
I make the green bean casserole up ahead of time and put in the fridge to throw in when the turkey come out.
3. Bake ahead of Thursday!
I bake the pie on Wednesday whenever possible or on occasion Thursday morning first thing well before turkey time.
When I am feeling ambitious and do crescent rolls, they have reheat instructions, so I bake Wednesday and reheat.
4. Set the table ahead of time.
Have people help set the table and figure out my serving dishes and serving utensils in advance. It makes it super easy to go to the table, grab the serving dish/plate with the serving utensil already in it. Less trying to get into the kitchen drawers while the turkey is getting carve, the grave is being made, etc.
I out out the silverware, glassware, and plates too. If people are coming over just for the meal, it looks super pretty and you look super pulled together, not like you are cutting corners and making dishing up easier.
Setting the table is also a way to get someone who is hovering in your way in the kitchen out of your way and doing something helpful. Even if they set the table wrong and you have to fix it when they aren't looking. FFFC I can't stand it when the table is set wrong/backwards.
