I feel my meal planning has just about come to a complete halt. Nothing sounds good and I don't want to smell anything. I'll be making baked potato soup tonight and sandwiches for lunch.

I'm with y'all. I've eaten caprese salad a couple of times, plain rice one night, french fries the other. So things clearly are going well over here. My husband is the real mvp and has been making food for him and the kids. When he asks what I want I just mumble something in his general direction. I see caprese salad in my future again tonight, ha!
@mkc3888 and everyone else, I feel you. I actually gave up last week and ordered from my friend’s catering business, they deliver weekly meals and I just got last weeks. It’s not as healthy or organic as I usually go, but at this point we just need food ready to eat. My cooking inspiration is non-existent right now.
This week we’re having veggie lasagna roll ups. You just take a lasagna noodle and roll it up with the filling, so it’s a different way to eat it. Ricotta cheese is all I want lately, and we put zucchini, carrots, and spinach in it to attempt to make it healthy.
Literally no plan this week. I don’t know what I’m going to want / be able to eat day to day so I can’t plan for it anymore.
There’s a sandwich I used to love from this little café that closed a couple years ago. I haven’t even thought of the sandwich in probably 5 years and all of a sudden I’m obsessed with recreating it ... so I have ingredients for that but that’s it in terms of fresh meals. 😂
I have a frozen pizza, stuff for various pastas and stocked up on grapes and dill pickles. I got a couple pre-made deli salads and if I have the energy to walk to Trader Joe’s tomorrow I’ll pick up some more ready-to-eat things.
Helpful Hint: taking walks over the weekend with my husband made me feel good. I wouldn’t have motivated myself but food was involved both times. 😂 Made me feel like I’m not turning into a completely immobile blob.
HelloFresh this week - pork flautas tonight, some kind of southwestern chicken bowl tomorrow, then some kind of Asian beef bowl. Thurs is family pictures and my birthday so we're getting Taco Bell. Fri we're ordering pizza for supper and lunch the next day because I have to make lamb gyros for Sat night (my 4yo's birthday dinner with grandparents). Last night we had tacos with frozen taco meat so it was quick.
Today, we had leftovers. Tuesday should be salmon, but that's what we were supposed to cook today but the idea of it wasn't appetizing for me, so we'll see if it changes tomorrow. I make a maple syrup and steak spices salmon. Wednesday will be curried pork chops with roasted squash (https://www.ricardocuisine.com/en/recipes/6618-curried-pork-chops-with-roasted-squash) Thursday should be caramelized tofu with sesame bok choy Friday will be maple syrup beef stew cubes Saturday will be Greek toast chicken. Sunday will most likely be takeout.
Last week, having pizza hut was the gourmet event of the week, I LOVED it!
