I have fully accepted my limitations and admit I will not be cooking for the foreseeable future. That said, I had an iced coffee for the first time since before we started trying yesterday, and it changed my life. I had enough energy to go to Trader Joe's in person and nabbed up a bunch of their prepared and frozen foods. So I feel ready to face the week (and spend less on delivery/wasted food!)
Meal Plan
- Lentil meatballs (this I think I will/can cook - you dump precooked lentils in a blender with an egg and some breadcrumbs and then pan fry. If not, the lentils will keep until second tri lol) - frozen ravioli in fun fall flavors - frozen veggie dumplings - hot smoked salmon & cauli gnocchi with alfredo sauce - hubby did indeed cook for us last week and I made sure to tell him how awesome it was and how much I appreciated. So this week he asked me to get stuff to make us cauliflower soup with parmesan crisps (who is he?!)
GTKY: 1 - Barcelona for sure, one of my fave cities and it has everything I love (ocean beaches, architecture and an amazing food scene). 2 - Somewhere in France, probably countryside since I already have a city in the mix. So I can use my rusty French and eat great food! 3 - Pre-covid probably would have said Miami. My whole family is in Florida about 2 hours north and I love love love Miami. Though that was as a single woman so maybe not so much as a family girl. Now, I might say somewhere in Japan within driving distance to Tokyo but closer to the water. I admire Japanese culture so much and wish I could get to Tokyo one more time before baby!
The cauliflower soup with parmesan crisps sounds amazing! Might have to look something up for that 😋
I have no idea what I'm prepping this week yet! My appetite and food preferences have been all over the place, but are mostly for salty foods or carbs. I think I'll just lurk this week to see what kinds of things people post, Haha.
GTKY - 1) Trieste, Italy 2) Buena Vista, CO 3) Pittsburgh, PA. --> lived in Trieste for 4 months and it's a beautiful and amazing city! I quickly fell in love with it and would return in a heartbeat. Also, it's very easy to travel to other parts of Europe from there! I love the nature in CO and hiking 14ers! I will always consider Pittsburgh as my "hometown" and hope to always have the means to return there, no matter where I go 😁
I’m feeling very uninspired this week. I don’t want to cook anything, or do anything for that matter. I just feel so tired and nauseous. With that in mind.... Monday- leftover buffet, fresh veggies and dip.
Tuesday- Ordering sushi for pick up (no raw fish.... maybe).
Wednesday- Pesto angel hair w/veg and salad. Thursday- Chicken and veg potstickers, cucumber sesame salad. Friday- Lamb shoulder steaks, hopefully bbq! And grilled zucchini spears.
GTKY! Barcelona, we actually had a ‘honeymoon’ trip planned in 2016, until we found out we were expecting baby #3! (He took a few years!). My husband and I both have a lot of Spanish heritage, my son is named after my grandma’s grandpa, who came to North America from Spain.
Boston! We visited the east coast a few years ago, and I loved Boston. Little Italy, the streets, the history, the people, I fit right in.
Vancouver, BC. I love the PNW, and it reminds me of my hometown- Seattle. But if I lived in Canada, I could have affordable healthcare! Our health insurance is like a mortgage. Not kidding.

1- Kalamata, Greece because of the beach, the weather and the food
2 - Mexico City for all the tacos
3- Malaga, Spain for the beach, the seafood and a cute small Spanish city
But truthfully I looove my city and don't think I would ever move. Although my fiancé and I hope to be able to spend half the year in Kalamata when we retire (in a very very very long time....)
