I missed Meal Plan Monday this week but it's the first day of fall! So what fall foods are you looking forward to making/eating this season? (This can serve as a general thread to collect recipe recommendations for fall/Thanksgiving food plans as we get closer to that!)

  • My absolute favorite fall meal is *SO* quick and easy. Pumpkin purée, chicken stock (vegetable stock if you want it vegetarian/vegan), thyme, garlic powder, salt and pepper. Combine all that to make a delicious pumpkin soup. Make it as thick or thin as you like with more or less stock. It’s extra delicious with buttered toast or grilled cheese sandwiches.

  • @sheviolentlyknits that sounds wonderful. I may add that in to my plan for next week. 

    I have a pumpkin bar recipe that I'm planning to make soon and also pinned some soup recipes on Pinterest over the weekend. I just need to actually make them. 
  • I finally found canned pumpkin! So I need to start hunting for good pumpkin treats to make. We made apple crisp this last weekend after going to the apple orchard but it wasn’t my favorite, I’ll do a different recipe next time.

    I got my SO to get some canned pumpkin this week and I want to make pumpkin pancakes this weekend, but also really have been wishing I had some pumpkin bread around the house during weekdays. And this isn't the most exciting but I saw a recipe for pumpkin spice oatmeal that sounded cozy, I'm a pretty big oatmeal person in the fall. Last year we got a bunch of apples at an orchard and made some amazing apple butter and a couple other things but I think this year will be more pumpkin-focused!

    We also usually do a few things in the crockpot like chili and beef stew but we haven't looked into recipes yet this season.
  • Last night we made apple sauce!
    1. Peel, core, chop apples
    2. Put in large pot over med/low heat covered
    3. Occasionally mix until it looks like apple sauce 😂

    And not necessarily fall, but this is the best pancake recipe I've found and we made some this morning 🧡

    I didn't get to do pumpkin pancakes this weekend but we got even more involved and made a pumpkin cognac cheesecake (we skipped the almonds). It's delicious! We froze most of it so we can just have it when the mood strikes.
