I love this beef stew recipe. It's perfect for this time of year. The recipe calls for cooking in the oven, but I have used the crockpot as well. I serve it over mashed potatoes. It's delicious!
I don't follow keto, so I just use some flour to thicken up the sauce at the end instead of xanthan gum. So good and so easy, any time we have people over for dinner they request we make it.
I love Mississippi pot roast in the Instant Pot. Chuck roast, ranch seasoning, pepperoncinis and butter. Then I thicken up the gravy with gelatin (bc keto). I’ve been making it so long I don’t follow a really recipe just eyeball it, but there a million recipes out there depending on your dietary specifics (keto version, dairy free version, paleo, etc)
@jennifer_louise Love corn chowder!!! Just made it this weekend. We don’t have an intapot though so I just make it on the stove. Only takes 15min to cook and so yummy! It has froze and reheated well in the past too.
Gosh I love a good Sunday roast with potatoes and carrots in the slow cooker. We seer the roast on both sides for a couple of minutes with some olive oil before tossing it in the cooker with some beef broth with a bit of Worcestershire sauce and whatever spices the hubs is feeling in that day (he is very make it up as you go lol but usually a simple salt, pepper, ground rosemary and thyme mix) and slow roasting it over night and through the next day. We add the potatoes and carrots mid morning so they are ready by supper.

Except we left out the bacon since we don't eat much meat. It was pretty good (probably would have been better with the bacon 😉).
