  • DH And I agreed that we would start eating better again. Last just for dinner i made a delish one on meal I found on Pinterest. It was chicken, asparagus, and tomatoes, with balsamic. Ugh so good!

    I made a healthy recipe that has such a fun name I had to share: falafel waffles

    High in protein and fiber, low in calories, and could easily be made gluten free if needed. The waffles can be frozen easily if meal prepping. I paired it with a homemade greek yogurt tzaziki sauce, fig balsamic, and chopped cucumbers and tomatoes.     I made keto lasagna and it turned out pretty well!

    @kpearse99 I have TONS of vegetarian/vegan recipes. I had my gallbladder removed back in 2010 and usually have to switch back to a plant based diet anywhere from 1-4 months a year because of it. What types of recipes are it looking for?
    Edited to add, two of my partners are also vegetarian. Don't know how I I forgot about that. If I don't have a recipe, they almost certainly do.

  • @kpearse99 this is one of my favorites. Veggie pot pie is a little labor-intensive (a lot of stirring and chopping) but it makes a LOT and you're good for at least 2-3 meals. I use red potatoes instead of the Yukon Gold because for some reason my local stores only sell the Yukon Golds in big bags. You can also make it without the wine and it's just as good.

  • Thanks girls!! We aren't vegetarians but we are trying to eat more plant-based and vegetarian with the occasional lean meat. We've tried a few different plant-based meats and they were actually pretty good so I think we are going to go down that route more often!

    @ashaislurking this time of year I am a BIG soup gal... so any soup recipes? 

    @notagoodpatient hahaha no worries! We eat meat, and we LOVE cheese, just trying to eat more well rounded and better <3 (I can't give up cheese though :wink: )

    Tortellini with Roasted Veggies & Pesto

    Beefless Stew

    Mexican Stuffed Peppers

    Greek Orzo Pasta Salad

    And I make this Weight Watchers Pot Pie with Morningstar seasoned chik'n strips instead of real chicken, and it's soooooo gooooood. My in-laws couldn't even tell it was vegetarian until they saw that I was also eating it, lol.

    @linzrunz  The blanket looks good!  I'm impressed that you were able to make that blanket so quickly!  I don't crochet, but I do knit.  It takes me what feels like forever to finish any of my projects.  I eventually want to learn how to crochet too, but I want to improve my knitting skills before learning how to crochet.

  • @AB518 thank you! I used to knit but it took me forever to finish anything too. And I’d never finish it. Crocheting is much easier and faster. I watched all the YouTube videos to figured it out. It was rough at first but now I’m getting the hang of it.

  • @linzrunz That's beautiful!! I do both crafts as well, and crocheting is so much faster! I do finish way more crocheted items than knitted ones! 

    AFM, hoping to have a pretty picture today of my finished IVF transfer socks! I'm working on the second sock today while I'm hydrating and resting from the flu! I turned the heel yesterday and I'm working on the gusset and instep now.
