This sheet pan meal is so good. It's one of my favorites. We put it over rice, but I feel like you can eat it plain or over something else like quinoa if you wanted. It's spicy so we adjust the chili garlic sauce as needed. We ate this last night!
Stir fry!! I love it because it’s quick and easy. I buy the bags of stir fry vegetables at the store, chop up some ginger and garlic, add soy sauce and it’s ready!
My favorites have been doing a roast chicken and using the leftovers for soup or enchiladas the next day OR, and I thought my stomach might not tolerate it, I have been craving grilled tilapia hobo packets with lemon slices and veggies - sometimes I serve it over rice, sometimes I eat it out of the packet like a creep.

I've really been into turkey chili lately. The key is roasting a poblano - it makes the chili so good!
