The weather here is still kind of yucky, and we have a super busy week this week so our plan is kind of eh this week.
Sunday-Chili (yum!) Monday-I have a book club/dinner meeting so my husband is making chili mac with the leftover chili for him and the kiddo Tuesday-Chicken apple sausages, rice, sweet potatoes Wednesday-Hair cuts for me and my son so probably something quick and easy (hopefully leftovers!) Thursday-Breakfast for dinner (one of our favorites) Probably eggs, sausage, and pancakes Friday-Chicken quesadillas, rice or chips and salsa Saturday-We are headed to Columbia to my Alma Mater Mizzou, to watch the Spring football game-assuming the weather cooperates. After the game we usually get pizza at the local pizzeria in Columbia that's AMAZING, Shakepeare's. I am already looking forward to it.

We ate terrible this weekend so salads, salads and more salads
Monday - Grilled chicken salad on spring mix with strawberries, walnuts, feta and balsamic vinaigrette Tuesday - Grilled chicken garden salad on spring mix with homemade ranch Wednesday - Tacos Thursday & Friday - My in-laws are having transplant surgery so we will probably pick something up This weekend - ???
Anyone have any other salad recipes they really enjoy and would like to share?
Being sick derailed my plans so I'm not really planning anything and winging it day by day. We will most likely do tacos on Tuesday, tonight DH wants to make dinner since I'm still feeling half crap so who know what's in store
Hoping to be more back on track by Wednesday! Lunches will be salads and turkey wraps since I have lots of ingredients for those.

Sunday- Honey Lime Garlic Salmon with brown rice and edamame Monday- Seared Garlic & Soy Tuna with sauteed green beans & almonds Tuesday- Shake and bake Pork Chops with steamed broccoli and rice pilaf Wednesday- Grilled Garlic Herb Chicken with butternut squash and kale Thursday- Chicken Apple Sausage salad with almonds/dried cranberries/goat cheese and balsamic glaze Friday- Shrimp & Broccoli Stir Fry with brown rice
Sunday is DH birthday so we'll probably go out either Sat or Sunday for dinner
I made a couple changes when I made it last though. I used ricotta cheese instead of cottage since no one at our house like cottage cheese. I also mix the sauce/ground beef with the noodles because we like it better all saucy.
I don’t have a recipe for Navajo tacos. (And that’s just what I know them by so hopefully it’s not a slur or anything) it’s just like a regular taco except you use fry bread instead of a tortilla. We use frozen Rhoade’s Rolls (the ones you need to thaw to rise). You let them rise and then you flatten them out into a circle and fry them in oil. We like to top them with regular taco things: meat, cheese, beans, corn, fried onions, lettuce, sour cream, taco sauce, salsa. We would just pile stuff on top of the fry bread and eat it like pizza but a friend rips up her fry bread into pieces and then eats it more like a salad (with less lettuce lol). We also like the fry bread for dessert with butter and honey on it! Sooooo good!
@hillbillywife ooh we have those too but are called Indian tacos up here in ND. (Also hopefully not inappropriate but the nearby reservations call them the same thing..) We used to eat the fried bread with peanut butter and jelly when I was growing up - definitely yum!

In an effort to eat more iron and avoid supplements I made carne asada tacos last night, soooo good! Worth the $$ trader Joe's meat. I have leftovers for a big steak salad tonight!
Also obsessed with pineapple again. It's a pain to cut up and once I have it cut up I just want to eat it all!

pineapple and I are not friends these days, I kept having weird abdominal pains, finally realized it's something about pineapple so I'm avoiding it for now. But I miss it, it is so tasty!
