I just love classic chocolate chip and sugar cookies decorated with pretty Christmas sprinkles - they're simple and festive and yummy.

My husband makes us make something like these each year.  They're sort of a pain because there's peppermint extract and food coloring involved but they're delicious and they're a tradition in his family so I try not to be a Scrooge about it!
