Couscous with Chickpeas (from The Joy of Cooking Vegetarian) Heat in a large skillet over medium heat: 3 T olive oil Add: 1 c sliced blanched almonds (I prefer to use slivered almonds) Cook for about a minute. Add: 1 t paprika 1 t cumin 1 t coriander 1/2 – 1 t hot red pepper sauce Cook about 1 minute. Stir in: 2 1/2 c vegetable stock 2 c cooked chickpeas (I use drained/rinsed canned chickpeas) 1 c chopped raisins Bring to boil and stir in: 1 1/4 c (instant) couscous. Cover, remove from heat and stand 5 minutes. Fluff coucous with fork. Season with salt and ground black pepper to taste. Garnish with 1/4 c chopped fresh parsley or cilantro
**delicious served either hot or cold

Some chicken, shrimp, tofu or other protein Some veg (we use broccoli, peppers and cauliflower) Onion Garlic Like a tbs Ginger (we buy the minced stuff in a jar) 2 tbs red curry paste 1tbs soy sauce 1 can coconut milk A few dashes fish sauce 1 lime
Prepared jasmine rice
Saute chicken until brown. Add onion and garlic. Add veg. Saute until tender but not too tender, they'll cook a little more in the sauce. Add ginger and curry paste. Stir and saute for about 1 minutes to coat veg and chicken. Add coconut milk, soy sauce and fish sauce. We sometimes add a little water at this point to thin the sauce, about 1/2 to 1 cup depending on how many people were feeding. Let simmer until it's reached the consistency you desire. Serve curry with a wedge of lime and the rice on top.
For anyone on a low carb diet my keto husband enjoys his with shirataki noodles.

Take a boneless ribeye, season with salt and pepper, set on counter to rest 15-20 minutes.
Heat a pan to medium-high, sear the steak on both sides (2 minutes per side roughly). Reduce heat and cover to cook through to your preference (I like medium rare so about 5 minutes for me).
While that's cooking, slice a package of cremini mushrooms.
Once steak is done, take it out of the pan, set on a cutting board, and cover with foil to let rest.
Toss mushrooms into the pan with steak drippings. Cook until softened and brown, add 2 tablespoons butter. When that's melted, sprinkle 1-2 tablespoons of flour over the mushrooms. Add milk gradually (starting with a half cup) and heat until thickened. Add milk a little at a time until you get a good texture. Then add two slices of havarti. Stir it in and taste. Adjust salt and pepper, then at the end add a heaping teaspoon of horseradish (or more or less depending on how spicy you like your food!)
Once the sauce is done, go back to your steak and slice it. Put sliced steak on your plate and cover with mushroom gravy. Goes good with mashed potatoes or egg noodles.
For meal prep for lunches for the week we will usually do a sheet pan meal of any protein and veggies on Sunday afternoon.

We chop the veggies (sweet potatoes, brussel sprouts, carrots, bell peppers, green beans, literally any veggies you have in the fridge) and toss with olive oil and salt, black pepper and spices (basics would be garlic powder and paprika, but we have a lot of blends that we will throw on there to do either a cajun flavor or a lemon pepper). Then place in an even layer on a sheet pan or roasting pan sprayed with cooking spray. Season meat if need be (for chicken or pork chops we will season but if we use brats or sausages they don't need to be seasoned) and place on top of veggies. Bake at 400⁰ F for 40-50 mins stirring half way to prevent sticking. Check meat internal temp for doneness.
For breakfast for the week we will make an egg bake, overnight oats, or just yogurt and granola.

For the egg bake: Spray 9x13 baking dish with cooking spray. In a large bowl place a bag of frozen hash browns (we like Mr Dell's All Natural because they are just potatoes). Throw in chopped peppers, mushrooms, olives, spinach, literally any veggies, bacon or ham is also good. In a separate bowl whisk 12 eggs and add seasoning. Pour eggs over potatoes and combine. If mixture isn't moistened enough, whisk 4 more eggs and add. Place in prepared baking dish and add shredded cheese to the top if you would like. Bake at 400⁰ F for 40-50 mins or until it no longer jiggles when you shake it.
@dukestar5 oooo the mexican quinoa is a fabulous idea! I'm thinking that with the cilantro lime shrimp would be pretty fantastic (just might have to tweak some seasonings). MH is very "meat, starch, and vegetable" and gets ornery if he doesn't get some form of animal flesh. The Coconuts household is not very vegetarian friendly lol (which is funny since I posted a vegetarian recipe). I make that one for myself for lunches and pot-lucks. DH doesn't like it

I feel ya too, @lurvleybunchococonuts and @dukestar5 on the vegetarian thing. DW doesn't like vegetarian meals much (yet she complains when I make too much meat - what is that?!). She also doesn't eat seafood. Honestly, I think my family had more of a problem finding out she doesn't eat seafood than anything else about her. They razz her because when we go out for nice seafood dinners she'll get steak (when I tease her later she always says "at least I didn't get chicken fingers" - her usual standby). My parents also cook salmon for the family and make a point to tease her about having to make chicken.
Oh, and she hates bones in meat. It sucks for me because chicken meat tastes So. Much. Better. off the bone (like legs and thighs). Likewise the best meat on a t-bone steak is the portion closest to the bone! But I always make nasty dry breasts because she prefers white meat. I've learned to prepare white meat so it's actually juicy so I guess it's made me a better cook.
But in general DW won't cook. DW and I didn't see each other most of the day on Saturday so I asked her what she'd eaten before I prepared dinner. She told me she ate Cheetos dunked in French onion dip, a Little Debbie cupcake, and a piece of string cheese. *sigh*
Big shocker: she had anemia before we started dating and I started cooking actual food for her.

I am vegetarian/vegan so these are my go-tos. H adds pre-cooked chicken to the vegan alfredo and sometimes to the Thai noodles but the tempeh soaks the flavor up so well.
1C milk of choice, 1/2c pumpkin puree, squeeze of honey, shake of cinnamon or pie spice, 2T nutbutter of choice. Shake in blender bottle/ water bottle. Pumpkin pie shake!
Instant pot Lemon Paprika Chicken. I do it a little differently than the recipe in that I make it all in the pot (no oven) and use frozen boneless/skinless chicken thighs, but I keep the rest of the ingredients the same. 1 tbsp raw pumpkin seeds (or sunflower seeds depending on which cycle phase) 1 tsp raw flax seeds (or sesame seeds) 1/2 avocado 2 tbsps plant based protein powder (unsweetened) 1 tsp maca powder (start small with this, then gradually increase amount...it's a lot of fibre...) 1 dollop of full fat greek yogurt frozen blueberries pineapple if in early LP handful of kale and spinach coconut water blend!!
My mum's amazing healthy chili:
1 medium onion, diced
3 cloves garlic
1 package ground turkey (you can use beef, or omit meat for vegetarian option)
2 stalks celery
1 large bell pepper (green or red...or both)
***any other veggies you want***
I put chopped kale and usually dice any other veggies that might be going bad in my fridge
1 large can red kidney beans and/or black beans
1 large can diced tomatoes
2 tbsp chili powder
1 tsp chili flakes
1 tsp cayenne pepper (or more if you like it spicy)
S&P to taste)
...I put all the ingredients in this order in a large pot on the stove (medium heat) - let everything cook well before adding the next ingredient (especially the meat), then once all in, bring to boil, then let simmer for 40 minutes before serving!
