Does anyone do meal prep?

Hey ladies!

I've been getting into meal prep lately because it makes eating healthy MUCH easier while I'm working. So far I've been working off these recipes I found on the Beachbody blog:

Does anyone have any other recommendations for recipes they like to use for meal prep? Ideally I'd like them to be simple, but if you have something good that takes a little extra time or effort, I'm game!

  • I make protein muffins, a pot of quinoa, some sort of vegetable/bean crockpot meal that I portion out and freeze half the portions (this week is a veggie curry with chickpeas), boil a dozen eggs for quick snacks, and portion and freeze bags of fruit/veg for smoothies. Some weeks I roast veggies and divide them up with greens to make mason jar salads, or make chia pudding in small mason jars, or make and freeze breakfast burritos. Other dinners include spaghetti squash lasagna, meatball, Mexican chili (house favorite). It's so easy to throw everything in a crockpot, leave it and then portion into gladware and freeze half for later in the week.
    I just have a grocery list that I stick to every week.

For easy, no-fuss options, I suggest looking into sheet pan meals - they require minimal prep and hand-on time, yet deliver big on flavor. Baked chicken and roasted veggies is a classic that's endlessly customizable.

    Another great choice is burrito bowls - cook up a batch of seasoned rice, beans, and protein, then let everyone build their own. If you're willing to invest a bit more time, I highly recommend trying out a slow cooker chicken tortilla soup or a hearty veggie-packed frittata. These make fantastic meal prep lunches or dinners. No matter which recipes you decide to try, the key is finding options that fir your schedule and taste preferences. I'm confident you'll be able to find some new go-to's that make meal prep a breeze.  :)
