I love this salad. I've made it as written, subbed butternut squash for the sweet potato, skipped the cashews, changed the greens, and it has always been amazing. The dressing makes it - it's fresh and delicious.
Her enchiladas are also delicious (not the Benchiladas, the regular enchiladas).
Have you you guys checked out skinnytaste? It's one of my all time favorite websites. We usually have something from there at least once a week (when I was cooking dinner on the regular...)
@kristah2 we eat pork on the regular (my mom doesn't eat chicken or turkey and my husband isn't a fan of non shellfish fish), are you looking for chops or tenderloin recipes because I have a ton?
@RhodaMorgenstern either or! We buy huge pork chops at Costco and usually freeze them in chops or in chunks. H usually ends up wanting a pork stir fry.. or nice days we will BBQ (like today) and once in a blue moon we will make pulled pork. Otherwise I got nothing.
So I make pork chops in the slow cooker when it's hot out. Season with s&p, coat with a little flour, brown in a sauté pan. When that's browned, I take scallions/shallots, 1/2 of an onion (whatever I have on hand), sauté them until they're just cooked, toss in butter and flour (equal parts) and slowly add milk. When it's thick (usually 5-10 minutes), I toss in some basil or sage. Then I put the chops (and whatever juices have accumulated), some large cut potatoes, pour the sauce over and set on low for 6 hours.
For quick chops, I marinate them in scallions, low sodium soy sauce, some rice wine vinegar, garlic and a little brown sugar. I sauté then or put tgem on the grill. I reserve some of the marinade before I put the chops in and while the chops are cooking, I put it in a saucepan, add some cornstarch and let it come to a simmer while the chops cook.
My all time favorite pork recipe is long and really for autumn but so good. I get a tenderloin, chop up an onion and 2-3 apples. I season the pork with s&p, sage and a little flour. Brown it off in a braised, throw in the onion and apples. When they're starting to catch, deglaze the pan with white wine. After a minute or so, add the pork back and fill it half way up the pork/onions/apple mix with chicken stock and white wine or apple cider. Put it in a low oven (usually around 200) for an hour, maybe 2 depending on the size. When it's done according to a meat thermometer, I usually serve it over a parsnip/potato mash.
I love to cook so you guys have inspired me to not be lazy tonight. If anyone needs any recipes, I'm always happy to share. also, if you like tacos (we regularly make tacos, the best mexican restaurant near us sells their homemade tortillas), skinnytaste's barbacoa pork is ahhhhhhmmmaaazing.
Pork question: what's a good cut that won't set my wallet back? I enjoy pulled pork but DH says it's cheaper to eat it at a restaurant.
I can get pork tenderloin fairly cheap at the grocery store. It makes a big batch so ends up cheaper than the restaurant. Pulled pork is normally made with pork butt but that tends to be to greasy for me. I use the tenderloin and it comes out perfect to me.
@SandNStarsNJ my favorite for pulled pork is Tyson pork shoulder - we can only find it at walmart and it is a bit pricy but really good. We also will buy a pork shoulder or pork butt if it is on a good sale and do it that way - it isn't quite as tasty but it is still good and makes a ton.
I'm with @Ladybug2821, I'm pork tenderloin all the way. I find shoulder and butt to be greasy (although if you make pernil, Puerto Rican roast pork, you need one of the two) but if you slow cook tenderloin, it falls apart and stays moist. If I get pork chops though, it needs to have the bone otherwise I find they get too dry.
@RhodaMorgenstern the USDA new pork recommendations is cook it to an internal temp of 145. I've found with this, they turn out really juicy and good especially when done on the stove or in the oven.
