I only think 1 day at a time for dinner - never good at meal planning.  Tonight we are having parm crusted tilapia with salad.

Chicken spaghetti tonight (one of my favorites).  Tomorrow is baked chili cheese dogs, and Thursday will be Big Red ribs in the crock pot.  DH and I will be back in the hometown this weekend for Mother's Day, so no weekend cooking for me!!!  His sister's do all the hard work, and I bring the dinner rolls :)

@vlagrl29 @sprkls8506 DH and I both only get paid once a month, so I plan our entire month's worth of meals in advance of shopping.  Otherwise our grocery budget would be shot!  That being said, we unfortunately don't get to eat a lot of fresh veggies, so the frozen section has become my friend.  I do try to keep some cash out for the fruit stand during the summer months though.

Jealous. He screwed up spaghetti a couple months ago. It took him an hour to make spaghetti and heat up meatballs last night. He asked if it counts as cooking. I said no. I defrosted the meatballs that I made. He boiled noodles.

Lol. I hate cooking. We do not prepare ahead either.  My DH cooks whatever meat we are having because he wants to grill it.  I just take care of sides.  I do make dishes like chili, lasagna, casseroles. I'd much rather bake.  I'd also prefer to eat just sweets lol.  We will probably have pasta.  I dont think we have meat thawed. My DS only eats pancakes and waffles so I just buy those frozen by the ton.  He eats at daycare but not at home.  His fruits and veggies only come from a purée pouch.

    @SP128 that's hilarious!

my DH loves to cook. He complains I don't cook enough- but then when I do cook he complains its not good enough. So I avoid it.

Tonight we're having pizza! We make our own dough and it's so yummy. It's our go to easy meal.

We don't usually plan ahead. We have a super tinny fridge so we buy food every 2-3 days and just get whatever is on sale.

@jchpg ever try grilled pizza ? We haven't done it in awhile. Takes practice

@Mack2342 your DS sounds like my DD!!!  She gets a little chocolate milk every morning (so I can get her probiotic in her), and I make her breakfast to take to school.  Then she eats two snacks and a lunch at school.  They tell me she eats all of it, no matter what it is.  So I try to make the same things at home.  Nothing.  It's a battle to get her to eat at home.  I think she just wants to eat with her friends.

We are big meal planners around here :) And also get SunBasket so actually now they meal plan for me!

Tonight we are having a lemongrass turkey salad (so good!)
I think this week we have the following meals coming:
korean beef skewers with apple cabbage slaw
spicy red salmon with basil and lime
jamaican jerk spiced pork with blueberry salad

We eat at my parents once a week and get take out or pull meat from our freezer for the other days.

I also made some chicken breasts to make salads for lunch for the week and a big sausage and veggie fritatta to have for breakfast for the week.

Tonight we are having seared chicken with creamy couscous and tomorrow is salmon with a roasted potato salad. Those two meals are part of our Blue Apron meals. We are on week two of their service and we love it! Since it's just the two of us, it actually saves us a lot of money on wasted ingredients.

DH does cook but only like 3 things. While I appreciate that he always offers to cook, I'm really sick of the food that he can make. Lol.

We tried pizza on the grill but scorched the bottom. I was so hungry I ended up eating the toppings and delicious fresh mozzarella off of the top. I have no shame. Lol

@SP128 yes we did try pizza on the grill- it's good but a little tricky. My husband loves to BBQ but we don't have a good outdoor place at our new apartment

@tlq0726. That is totally my DS.  I think it peer pressure lol so he eats it with other kids.  I make same meal at home and he refuses.  So annoying

sprkls8506 I also prefer baking to cooking.  Last night I made a pound cake for the pizza party thing at work today.

@SP128 Pizza on a grill sounds like a recipe for disaster.  I have no grace and I’m sure I’d probably end up with a ginormous mess if I tried that.

Therapy tonight, so probably having some dippy eggs and chocolate milk.  Our chickens are producing eggs like crazy, so this meal is now an easy go-to staple.

I'm another prepper! (weekly). Last night we had cauliflower cheese crock pot soup with popovers, tonight I have a mexican casserole to pop in the oven, tomorrow chicken/broccoli/cheese turnovers, and Thurs probably mexican casserole again. We always keep some frozen chicken around so if needed we can just defrost and marinate/grill it with some Rice-a-Roni or something (our "what are we having for dinner tonight" meal).

As you can guess, I <3  my carbs , hee hee.

ETA: I did fish tacos last week for the first time with homemade coleslaw (was trying to use up a 1/2 cabbage)....SO going into the rotation!  :)

Cajun fish tacos with homemade jalapeno coleslaw tonight, steak with roasted red potatoes and artichokes tomorrow night, kielbasa sausage with bell peppers and rice on Thursday night, Ahi tuna melts on Friday night.  Saturday night we will eat out and Sunday we are making marinated lamb chops and pistachio crusted salmon for mother's day.

I used this one, but you can alter it any way to suit your taste:

FYI: I used the darker part of the leeks and when I pulsed in the blender I got a bit of a greenish cast to the soup....learn from my mistake, use the white part of the leek!! :o

@Chawk17 - its meal delivery - like Home Chef. We've tried Blue Apron, Plated and have landed on Sun Basket mostly because they offer Paleo options. We aren't strictly paleo but try to minimize carbs so it works for us.
