I'm trying to think about what to have for the Super Bowl. None of my teams are playing, but I love an excuse these days to indulge. I love wings and nachos. Let's hear your favorites.
Tortilla chips and dip. All the dips; seven layer taco dip, cheesy sausage rotel dip, guac, salsa, queso... If anyone has any amazing dip recipes throw them my way!
If anyone is obsessed with pickles you have to try pickle wrap dip!
1 block of cream cheese, some lunch meat ham cut up, then pickles chopped up. Stir and that's it! SO good! I add sour cream sometimes too. (Not my picture)
Food is my obsession...I will eat just about anything.
Chips and salsa/queso are a must. We usually also do a taco bar, where I'll have seasoned beef, chicken, and beans, along with all the toppings and people can just make their own (lazy for the win!).
I love wings, and nachos, and jalapeño poppers, and OMG...FOOD! I should have never opened this thread.
We do chips/salsa/queso every time. Buffalo chicken dip, jalepeno popper dip, bacon wrapped smokies with brown sugar on top, and wings are also frequently made for any of our football gatherings.
That pickle thing reminded me of an appetizer my friend made at a party one time. She spread cream cheese on a slice of ham then rolled a pickle in it and sliced it! Sooo good!
I'm serving a chicken liver 'Patriots' pate shaped like a football, 'Falcon food' spicy fish and bean soup (gotta have soup in bowls for the super bowl - so punny), and tuna salad 'quarterback sliders' on jalapeno kings Hawaiian rolls. Drinks: Patriots blue spicy margarita and Falcons bloody Mary with this awesome spicy bourbon maple pickle spear garnish. I'll also have some plain pasta for the less culinary adventurous (some 4 year olds and my friend Chris).
Mostly, I buy foods in bulk, so this is a way to use up things I'm supposed to limit (tuna, chicken liver) before I have to throw them out, thereby defeating the purpose of getting great deals.
Definitely buffalo chicken dip! I also make a MEAN black bean dip that people love!
Black Bean Dip Recipe -
Ingredients: 1 can of rinsed and drained black beans, 1 chopped tomato, 1 can of rinsed and drained can of corn kernels, 1/2 red onion chopped, 1 bunch of cilantro chopped, juice of 1 lime, juice of 1 lemon, 1/4 cup olive oil, salt and pepper
Toss all the ingredients in and stir... and refrigerate until serving. Serve with tortilla chips.
@sejica OMG I had the best chicken liver/pate tart of my life this past weekend... DH and I finally got reservations (6 weeks in advance, it is crazy) to this new-ish, trendy spot and the food was amazing - tart was soooo good!
I'm not sure what I'm going to contribute to our super bowl party. I'm either going to make stuffed peppers/jalapeños, which is mini bell peppers and jalapeños cut in half and filled with a cream cheese-based filling. I mostly make it with herbs, lots of garlic and Parmesan thrown in, but I'd probably do the bacon, cheddar, green onion version. So good! Then they're baked at a high heat (they're best if grilled) so it all melts and the bottoms char a little. Either that or I'll make a dip. Probably a taco dip where it's basically taco ingredients layered together.
Last year, I made cupcakes, and I drew footballs on them. Kind of like this.
I'm post-overnight shift for Game Day and will probably pick up a few extra hours at job #2 (need $$$$ for baby!)...but, I would NEVER miss the opportunity to indulge in CHIPS AND DIP, my favorite food ever!
I usually make my own version of 7-layer dip (because most versions have olives, which I'm not a fan of), eaten with any type of tortilla chips: 1) 16oz refried (or black) beans 2) 1 cup sour cream mixed with 1 package of taco seasoning 3) 1 cup guacamole (usually buy at TJ's) 4) 1 cup FRESH salsa (also, usually from TJ's) 5) 1 cup lettuce 6) 1/2-1 cup chopped fresh tomato mixed with 1/4-1/2 sweet onion 7) 1-2 cups Mexican blend (or cheddar) cheese
You can always exchange black olives for layer 6. I like putting the layers in this order to allow for the heavy stuff to remain steady on the bottom. Also, I highly recommend heating for a bit in the oven before serving to get the beans warm and melt the cheese!
Can you guys tell that I'm a little obsessed with dips...so excited to try out some of the new recipes above!
